LUMPIA VEGETABLE

1 1/2 lbs frozen mixed vegetables, thawed
1 lb ground pork
3 pieces garlic, crushed
2 tsp soy sauce
1 onion, chopped
ground black pepper
salt to taste
30 lumpia wrappers
vegetable oil for frying

How to cook:
1. Heat oil in skillet. Saute garlic and onion then add the ground pork. Stir until the ground pork is cooked.
2. Add the mixed vegetables then add soy sauce. Season with salt and pepper. Remove from heat and set aside until cool enough to handle.
3. Scoop 1 1/2 tbsp of the filling and place diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight. Moisten the other side of the wrapper with water to seal the edge.
4. Heat oil in skillet. Fry the rolls for 1 to 2 minutes, until all sides are golden brown. Drain on paper towels.
5. Serve immediately. Vinegar with garlic and ground pepper as dipping sauce (optional).

CHOPSUEY with QUAIL EGGS Recipe

Chopsuey with Quail Eggs
Chopsuey with Quail Eggs is a version of Chopsuey (or Chop Suey) that makes use of thin slices of pork and boiled quail eggs, along with the usual vegetables. In the Philippines, chopsuey has been very popular. It is also spelled and referred to as Chapsuy of Sapsuy by some people.

INGREDIENTS
1/4 pound pork shoulder thinkly sliced
1 head cauliflower cut into florets
1 whole carrot medium, sliced crosswise
1 whole green pepper chopped
1 whole red pepper chopped
1/2 half small cabbage chopped into large pieces
12 whole quail eggs boiled
1 whole yellow onion sliced
4 whole garlic cloves crushed and chopped
1 cube bagoong alamang salted shrimp
2 tbsp oyster sauce
1 tbsp corn starch
1 cup water
3 tbsp cooking oil extra virgin olive oil for more health benefit !
1 tsp salt and pepper adds to taste

INSTRUCTIONS
Heat oil in a pan. Sauté the garlic and onion
Once the onion gets soft, continue to sauté until the pork turns light brown.

Pour the oyster sauce. Stir-fry for 3 minutes.

Add the shrimp cube. Pour-in water. Let boil.

Cover and cook until the water reduces to half.

Add the cauliflower florets. Stir and add the carrot slices. Gently stir until the ingredients are well blended.

Add the bell peppers and cabbage. Stir-fry for 3 to 5 minutes.

Sprinkle some salt and pepper. Stir and cook for 3 minutes.

Combine the cornstarch with ½ cup water. Stir until the cornstarch is diluted. Pour on the pan.
Continue to cook while stirring until the texture of the sauce thickens.

Add the quail eggs. Transfer to a serving plate.
Serve. Share and enjoy!

RECIPE NOTES
You can add shrimp, chicken, or beef to this chopsuey with quail egg recipe to make it even more enjoyable. Like any recipe it can always be mixed up to add to the flavor of the final product.

One other thing is that Chopsuey recipe is often really good if eaten with rice.
