Tanulmányaimat 2017-ben végeztem a kolozsvári “Iuliu Hațieganu” orvosi és gyógyszerészeti egyetem táplálkozástudomány és dietetika karán. Személyre szabott tanácsadással segítek a hozzám fordulóknak visszaállítani a szervezet belső egyensúlyát, valamint maximalizálni a test öngyógyító folyamatait. Véleményem szerint, a megfelelő étrend mindenkinek mást jelent, éppen ezért elengedhetetlen fontosságú, hogy megtaláljuk a számunkra legmegfelelőbb táplálkozást, figyelembe véve az egyéni igényeket, lehetőségeket.

You can optimize your intake of iron-rich foods like lentils, by consuming them with a good source of vitamin C, like bell pepper! Here we have a red lentil meal, with kidney beans, parsley, bell peppers and paprika, a good example for the iron and vitamin C combination and also amazingly tasty.

Ingredients:
250 g red lentil
50 g red kidney beans
🧄 2 cloves
🧅 1 piece
~ 80 ml tomato paste
🫑 1 piece of bell pepper
🍃 3 pieces of bay leaf
🥄olive oil (or oil of your choice)
Fresh parsley
Pinch of salt and black pepper

Method:
1. Add oil and onion to a pan on a medium-high heat and caramelizes the onion for 3 minutes, than add garlic and stir in the tomato paste.
2. Stir the lentils, tomato paste, bay leaves, paprika, parsley, kidney beans, salt and black pepper.
3. Add 1-2 glass of water, cover and boil for 20-25 minutes.
4. Be present and enjoy your meal!

Healthy looks and feels different for everyone, but what we do know is eating a colourful meal at least once per day is a great place to start.

💡Tip of the day:

Sesame seeds are one of the best sources of calcium plant-based eaters can choose.

On my plate: 🥗
Spinach, red beans, red cabbage, avocado, green onions, tomatoes, carrot, grilled halloumi, sesame seeds, olive oil, apple cider vinegar & salt.

You gotta love it, if you wanna do it for life...my work, my passion.🤍

This year in a nutshell:
Just really thankful for the “good” and the “bad” moments, because I see life as a process of becoming, a combination of phases, kind of “grow through what you go through”.

Friendly reminder, life is still full of blessings, even in our tough seasons! 💫

One of the most basic rule I try to follow is eating unprocessed whole foods from the 🌍

Sometimes you just have to throw together some basic whole foods like quinoa, avocado, spinach, roasted brussel sprouts and sweet potatoes. To make your salad even more nutritious you can add sesame and black cumin seeds, olive oil and apple cider vinegar.

Broccoli and mushroom spaghetti to forgetti 🍝(...what’s happening all around the 🌍)

Method:
* Chop the mushroom and garlic into thin slices.
* In a hot pan add coconut oil, then add the chopped garlic and cook on medium heat for 3 minutes. Add the chopped mushroom, broccoli, 1 tablespoon of butter, 1 tablespoon of parmesan cheese, & all the condiments. This time I used black pepper, curry, red bell pepper powder, thyme and salt. Let it cook for 10-15 minutes.
* Meanwhile the spaghetti is boiled in salted water.
* When everything is cooked, mix spaghetti with the vegetables.
* Sprinkle some black cumin on top.

It’s officially soup season!🍁🥣🍂
Try out this unBEETable super easy sweet potato and beetroot cream soup.

Ingredients:
1 tbsp (15 ml) coconut oil
1 onion
3 cloves garlic
3 medium size beet
1 medium-large sweet potato
400 ml coconut milk
Fresh basil leaves to garnish
Thyme, salt & pepper

Method:
1. Heat 1 tbsp coconut oil in a saucepan, add the chopped onion and cook over a gentle heat for 5 minutes, until the onion is soft. Add the garlic and the thyme leaves and cook for a further 3 minutes.
2. Chop the sweet potato & beetroot into little pieces, add them to the boiling water, cover and cook until tender.
3. Once cooked, blend all the ingredients in a food processor, to create a thick puree.
4. Retur the puree to the pan, add coconut milk and season with salt & pepper. Cook for a further 5 minutes.
5. Garnish with fresh basil 🌿
6. Enjoy your meal!

💡Beets are rich in pigments called betalains that have been shown to contain anti-inflammatory properties.
