CHILLI &GARLIC MOGO.

"Mogo also known as Cassava is a starchy root that is a staple in Africa. In Spanish speaking countries it is known as Yucca. Mogo is a nutritious root which grows underground and has higher protein than white potatoes. It's light in flavor with a chewier texture.
Cassava contains 18 times more Vitamin E, five times more Vitamin A, more Vitamin B2 and Folate than potatoes. On the other hand, potatoes contain three times more Vitamin B6, two times more Vitamin B5, and more Vitamin B3. Both have equal Vitamin C, Vitamin B1, and Vitamin K."
500g frozen cassava
3 tbsp.oil
200 ml tomato puree or passata
1 tsp.onion granules/powder
8 cloves of garlic (paste)
4 hot chillies (finely chopped)
2 tsp.red kashmiri chilli powder (for colour)
1 tsp.ground cumin and coriander powder, salt to taste
1 tbsp.sugar
1 tbsp.lemon juice
Freshly chopped coriander

• Add frozen mogo to a large pan of boiling water along with some oil and salt.
•Do not overcook.
•Once cooked, discard the water and let the mogo cool down.
•Cut the mogo into chips and coat in some oil.
•Preheat the air fry and cook the chips until crispy and light brown.
•Keep it aside.
•Heat oil in a heavy based pan or kadai.
•Add tomato puree and cook until 1/3 left.
•Now add garlic and onion granules.
•Cook for another minute.
•Add the fresh chillis
•Cook for another minute.
•Then add red chilli powder and ground cumin and coriander.
•Add sugar, lemon juice and salt.
•Mix well, cook further for a minute then add air-fried cassava chips.
•Mix thoroughly and sprinkle freshly chopped coriander.
•Serve immediately with lemon wedges
