Too much leftover tangerines from Chinese New Year? Here's how you can make dried peels similar to the TCM herb! They can be used in all sorts of recipes, such as soups, teas and desserts — besides adding flavour, you can also reap some of the nutritious benefits!

---
1. score the tangerines from the bottom, into 3 equal parts. Avoid cutting into the flesh so that the peel doesn't get wet!
2. Peel back the tangerine peel away from the fruit.
3. Remove as much of the white out as possible (reduce bitterness)
4. Dry in the oven at 100C - 120C for an hour, or until dry!
5. Store in an airtight container, away from moisture!
