When the weather is too hot and you want a light and simple mealโฆ.
I made soba noodle salad for lunch cos minimal cooking! I only had to cook the soba which took about 5 mins and soaking the frozen edamame in hot water for about 3 mins.
How to:
๐ Prepare salad dressing by grating ginger and garlic into a small bowl. Add light soya sauce, rice vinegar, lemon/lime juice, sesame oil and olive oil.
๐ Prep your vegetables and add them into a big bowl. (By using a bigger bowl, it is easier to toss and mix everything later.)
What I used today: Cucumber, red bell pepper, carrot, cabbage and edamame.
๐ Cook soba noodles according to package. Drain and rinse well a few times.
๐ Add soba noodles into the big bowl of vegetables, pour the dressing and toss to mix everything well.
๐ Serve and enjoy! I added some broccoli and alfalfa sprouts today. You can top with some toasted sesame seeds!
If you want to add more ingredients, you can also add tofu, mushrooms, meat etc. whatever you desire lah but of course more cooking will then be required. I added some shredded chicken (since I have some in the fridge) to one portion and the other two portions remain meatless.
