We had our final training session on Tuesday in our Kürtőskalács Academy training kitchen with the Kamenicky family, who came all the way from Tarpon Springs, Florida 🇺🇸

Katerina cleverly planned the training as a pit stop during her annual visit to her family in the Czech Republic. Both Katerina and Rory proved to be excellent chimney cake bakers, and little Mason also got involved 👨‍🍳😊

When you’re self-employed and have customers who rely on you—especially at this time of year, when hundreds are working flat-out at Christmas markets—you really have to plan ahead. Unfortunately, things don’t always go to plan, and it can be both frustrating and stressful.

Six weeks ago, I ordered one ton of coconut milk powder. It’s a key ingredient in ALL of our Kurtos bakery mixes, giving the final product its signature creaminess and smooth texture. Some customers who make their own vegan recipes use only water, but I find the result tasteless. That’s why we substitute the cow’s milk powder used in our Premium Original R1 & R2 mixes with coconut milk powder in our R4 Vegan-Style COMPLETE Kurtos Kalacs Mix.

Despite all my careful planning, the pallet of coconut milk powder was delivered to the WRONG customer, in the WRONG country—in Rome, Italy! It took a full week of chasing the shipper (whose mistake it was) to get it collected and rerouted to Slovenia.

So you can imagine how happy I was to finally see my pallet of coconut milk powder sitting at the mill, ready for today’s production. Working last-minute dot-com is definitely not my style! 🙃

It was a pleasure to meet the husband-and-wife team, Bogdan and Anca — originally from Romania but proud to call Canada home for over 30 years. Their next adventure, however, takes them even farther afield! They’ve just purchased a house in Bonaire, a beautiful Dutch Caribbean island.

Far from ready to retire, they’ve decided to seize the opportunity to cater to the many cruise ship visitors by baking and selling delicious Chimney Cakes and Chimney Cones to passing tourists. It will no doubt be a challenge to get their equipment and mix shipped from Europe, but they’re certainly up for it — and we do love a good challenge ourselves!

It’s just a shame they didn’t opt for our “We Come to You” training service — I could definitely use a bit of sunshine right about now!

Unlike most girls, fast cars don’t impress me — but you know what does? A really well-built, fully kitted-out food truck! When I saw this bad boy, my heart started racing. It’s decked out with our Electric Grill 6 baking machine, plus all our cooking rolls and racks. I can’t wait for this mean machine to hit the streets and start serving up delicious chimney cakes and chimney cones! Big shout out the amazing Emil and his Lumier’s Chimney Cake franchise!

For more than 15 years, we’ve dedicated ourselves to creating the best kürtőskalács—developing top-quality equipment and bakery mixes so that our customers can produce truly excellent products.

Today we visited the Kürtőskalács Festival in Budapest. In the past, it was held in a nearby park with many different vendors participating. Now, however, the event takes place inside the Budapest Zoo, with only one vendor baking and operating several selling points. Visitors must even pay the zoo entrance fee just to attend.

Yesterday, we held a training session in Budapest with a new company. I can honestly say that the very first batch of kürtőskalács the trainees produced—even though it was far from perfect—was still better than what’s being served at the zoo festival. I just don’t understand it. This vendor has a prime location and access to a global customer base, yet the kürtőskalács they offer is among the worst I’ve ever seen or tasted. It was completely inedible.

The kürtőskalács wasn’t risen at all—raw in the middle, dry in most parts, and soggy on the outside from being wrapped in plastic with no way for the steam to escape. Honestly, every member of their team would benefit from proper training with us!
