CAKE "SNOW-COVERED TANDARIN"
Ingredients:
Biscuit:
7 pcs - eggs
200 g - sugar
120 g - flour
75 g - starch
tangerine zest - 1 tsp
Tangerine Kurd:
1 piece - lemon
7 pieces - medium-sized tangerines
200 g - sugar
40 g - butter
3 pcs - eggs
Cream:
Whipping cream 33-35% - 500 ml
Mascarpone cheese - 250 g
Powdered sugar - 50 g
Cooking:
1. Turn on the oven at 180 C.
2. Separate the proteins from the yolks. Beat egg whites, gradually adding sugar a little more than half, until strong peaks. Separately beat the yolks with the remaining sugar.
3. Sift flour through a sieve along with starch.
4. Next, carefully combine the proteins, yolks, flour mixture and tangerine zest. Pour the batter into a springform pan lined with parchment. Bake until done. Approximately 50 min.
5. Remove the finished biscuit from the mold, cool, wrap in cling film and send to the refrigerator overnight.
6. Cooking Kurd:
Mix the zest from the lemon and 4 tangerines with sugar, add the juice from all the tangerines and lemon there, add lightly beaten eggs. Let stand for about 30 minutes. Then we filter all this mixture into a saucepan, add oil and cook until it thickens! You don't need to boil.
7. Cool, pour into jars and also send to the refrigerator. Until morning.
8. Whip cream with powder until soft peaks, add mascarpone, beat everything together. Received a homogeneous cream.
9. Cut the biscuit into 4 cakes.
10. We collect the cake:
We coat each cake with Kurd, let it soak a little, then cream. Collected, decorate as desired.
