Нежное куриное мясо в хрустящем слоеном тесте.

Ингредиенты:
250 г муки
100 г масла
700 г курицы (2 окорочка)
200 г лука
желток для смазки
кунжут для посыпки (по желанию)
соль
перец
Самса – очень популярное блюдо среднеазиатской кухни. Часто готовится из баранины c добавлением курдючного жира, а также из курицы, тыквы, зелени. Тесто для самсы в основном используется слоеное. Чтобы сделать такое тесто – обычно сначала вымешивают муку с водой, потом раскатывают получившееся тесто в очень тонкий прозрачный пласт на всю ширину стола, смазывают маслом или жиром, аккуратно заворачивают в рулет. В общем, занятие не из простых.
Я решила попробовать сделать слоеное тесто для самсы упрощенным способом, и не прогадала, - самса получилась великолепная – тонкое хрустящее слоеное тесто и нежная куриная ароматная начинка. Получается 14 штук.

Приготовление:
Готовим тесто.
В емкость положить муку и 1/3 ч.л. соли.
Туда же натереть на крупной терке масло (из холодильника).
Периодически перемешивать его с мукой, чтобы кусочки не слипались.

Хорошо перемешать, влить 100 мл холодной воды.
Руками слепить тесто в комок (долго не месить).
Поставить в холодильник на 30 минут или больше.

Готовим начинку.
Лук почистить, очень мелко порезать.

С окорочков срезать мясо, и мелко его порезать (жир не убирать, чтобы самса получилась сочнее). Из 700 г у меня получилось примерно 500 г куриного мяса.

В емкость положить лук, куриное мясо, соль (я положила 1/2 ч.л.), хорошо поперчить.
Перемешать.

Лепим самсу.
Тесто разделить пополам и одну часть вернуть в холодильник.
Из второй части скатать толстую колбаску и разрезать ее на 7 частей.

Каждый кусочек теста размять руками.
Затем раскатать в тонкий круг диаметром примерно 12 см (при необходимости подсыпать муку).

На середину выложить большую горку начинки.

Поднять два края, слепить их между собой.

Поднять третий край, слепить.

Также хорошо придавить уголки.

Перевернуть, получается остроконечный треугольник.
Затем тоже самое повторить для всего остального теста.

Полученные заготовки выложить на противень, застеленный пекарской бумагой.
К желтку добавить ложку воды, взболтать. Смазать заготовки.

Сверху по желанию немного посыпать кунжутом.
Поставить в разогретую до 180 градусов духовку. Выпекать 40-50 минут до легкой золотистой поверхности.

Самса очень вкусная в горячем виде.

Grated cake with lemon

Ingredients:
For the dough:
- 450 g of wheat flour
- 250 g of frozen butter
- 150 g of sugar
- 60 g sour cream 20%
- 2 eggs
- Vanillin
- Salt
- 10 g of baking powder
For the filling:
- 2 lemons
- 150 g of sugar
- 15 g of starch
For decoration:
- 20 g of powdered sugar
- 30 g of walnuts

Preparation:
1. Beat eggs in a bowl, add sugar, a pinch of salt, vanilla and sour cream. Beat with a whisk.
2. Sift flour into another bowl, add baking powder and mix.
3. Rub the frozen butter into the flour on a large grater. Rub flour with butter into crumbs with your hands.
4. Pour the egg mixture into the crumb and mix.
5. Divide the dough into two parts - 1/3 and 2/3, wrap each of them in cling film. We send most of the dough to the refrigerator, the smaller part to the freezer (for 30-40 minutes).
6. Using a fine grater, remove the yellow part from the lemons. Then we cut off the white skin, leaving only the pulp.
7. Cut the pulp into small pieces, removing the bones, and grind in a blender to a pulp.
8. Put chopped lemon pulp, grated yellow peel, sugar and starch in a saucepan. Put the saucepan on the heat, bring the contents to a boil and cook for 1-1.5 minutes until thickened, stirring. Let the lemon filling cool completely.
9. Turn on the oven to heat up to 190°C.
10. Place one sheet of parchment on the table. Spread most of the dough on top. We cover it with a second sheet of parchment and, using a rolling pin, roll out the dough into a layer 1-1.5 cm thick.
11. Spread the filling evenly on the dough base.
12. Take out the second part of the dough from the freezer and rub it on a large grater on top of the filling. For decoration, cut the nuts into small slices.
13. We transfer the preparation for the pie together with the parchment onto a baking sheet. Sprinkle the grated cake with lemon filling with chopped nuts.
14. Bake the grated cake for 25-30 minutes.
15. Sprinkle the finished lemon cake with powdered sugar. Immediately, while it is still hot, cut the cake into portions.

Lush apple fritters

Ingredients:
- Apples - 4 pcs.
- Sugar - 3 tbsp. l.
- Wheat flour - 4 tbsp. l.
- Eggs - 1 pc.
- Cinnamon - 0.5 tsp.
- Oil for frying.

Preparation:
1. Wash the apples, peel the skin if it is thick. Grate on a coarse grater.
2. Transfer the grated apples to a deep bowl. Add sugar and mix thoroughly with apples.
3. Add cinnamon to this mass and mix again. Stir in the egg. Stir the mixture until smooth.
4. Add sifted flour to the apple mixture. Mix the flour into the dough in small portions so that there are no lumps in the dough.
5. Heat the pan with oil. Put the fritters on the pan with a tablespoon and fry on a hot pan on both sides until golden.

Rice soup with chicken

Ingredients:
- Chicken fillet - 500 g (I use bone);
- Potatoes - 200 g;
- Onions - 100 g;
- Carrot - 100 g;
- Rice - 100 g;
- Parsley - 0.5 bunch;
- Salt - to taste;
- Ground black pepper - to taste.

Preparation:
1. First, we need to boil the bones, if you want to make a more dietary soup, use chicken fillet.
2. Wash the meat well, cut it into several parts and send it to a rather deep pan. Pour about two liters of water into the pot with the meat and put it to cook on the stove. At the same time, the water in which the bone broth is cooked must be salted, approximately half a tablespoon. Bring the water to a boil and cook the meat for about thirty minutes.
3. While the meat is cooking and our broth is being prepared, we will cut the vegetables. Take the onion, peel it, wash it and cut it into small cubes on a wooden board with a knife.
4. We will also peel and wash the carrot, we will cut it into thin cubes, but if you do not like to see large carrots in the soup, you can chop it on a coarse grater, this will not change the taste of the soup.
5. Now peel the potatoes, wash them and cut them into small cubes.
6. Next, we will cut the parsley, beforehand, if desired, you can add dill to the soup.
7. Remove the meat from the broth into a separate dish for further cooling and grinding. Add diced onions and diced carrots to the chicken broth.
8. Mix everything well and add potatoes to the pan.
9. Wash the rice. After that, we send the rice to the pan with the rest of the ingredients, mix well, pepper, salt, and if desired, add spices that you like. We will cook all this for about twenty minutes until the potatoes and rice are fully cooked.
10. Cut the chicken into fairly large pieces, having previously separated the meat from the bone.
11. After the rice is cooked, add the chicken to the soup.
12. Add the chopped parsley, if desired, throw a bay leaf into the pan, mix everything well and turn off the heat.

Oatmeal cookies with chocolate

Ingredients:
- butter - 175 g;
- brown sugar - 215 g (regular sugar is possible);
- flour - 100 g;
- baking powder - 1 tsp;
- ground cinnamon - 1 teaspoon;
- instant oatmeal - 260 g;
- dark chocolate chopped into pieces (chocolate drops) - 80 g;
- salt - a pinch

Preparation:
1. Beat butter at room temperature with sugar until white.
2. Add baking powder, cinnamon, a pinch of salt to the flour, mix everything, and then sift the flour into the whipped butter.
3. Add oatmeal. Now you need to mix it all until smooth. No need to knead for a long time. The cookie dough is ready.
4. Now add chocolate drops to it and mix.
5. We sculpt balls of the same size. This can be done with a tablespoon or use an ice cream scoop. Place the balls on a baking sheet with parchment at a distance of 5 cm from each other.
6. Now flatten these balls with a glass with a flat bottom. In this way, we get such cakes with a height of approximately 5-7 mm.
7. The oven is already heated to 180 degrees. Bake the cookies for 12-15 minutes (depending on your oven) until golden.
8. It is best to store ready-made oatmeal cookies in a container with a closed lid.
