Eggplants with minced meat in a pan
Ingredients:
Eggplant - 2 pcs.
Minced meat - 300 g.
Chicken egg - 2-3 pcs.
Salt - to taste
Black pepper - to taste
Vegetable oil (for frying)
Preparation:
1. Salt and pepper the minced meat. Mix well.
2. Cut the eggplants into circles. Try to cut the rings thinner so that they and the minced meat have time to fry. Eggplants do not need to be salted, otherwise they will release juice.
Then make "sandwiches", that is, put a thin layer of minced meat between two circles.
3. Beat the eggs a little with a fork, add a little salt and pepper.
Dip the prepared eggplants with a layer of meat in the eggs and fry them in a well-heated frying pan with oil.
4. Fry on both sides until an appetizing ruddy crust. In order for them to cook faster, when turning over, poke the surface with a fork.
