The river crayfish is the supreme crayfish, a group of decapods that united highly organized crayfish, as well as crabs and shrimps. In all representatives of this order, the trunk consists of a constant number of segments: there are 4 head segments, 8 thoracic segments and 6 abdominal segments.

If you consider cancer, you can easily see that its trunk is two parts: the cephalothorax (which is a fused head and thoracic segments, the seam of fusion is clearly visible from the back) and a segmented abdomen ending in a wide tail. The cephalothorax is hidden under a hard shell of chitin — polysaccharide, and in addition is covered with calcium carbonate, which increases its strength.

The shell is the skeleton of a crustacean. It performs a protective function, the internal organs of cancer are securely hidden under it, and the arthropod muscles are attached to it. On his head there are two pairs of antennae or antennae, covered with bristles and having a very long length, so the name "antennae" is more suitable for this organ. They perform the function of smell and touch, so cancers can't go anywhere without them. In addition, there are balance organs at their base. The second pair of antennae is inferior in length to the first, and is needed only for touch.

1. After you have brought the crayfish, fill it with cold water and leave it for 1-2 hours. And even better, if you soak the crayfish in milk, the meat will turn out more tender after boiling.
2. For a fragrant broth, use shallots, carrots and garlic. Boil water in a saucepan, add vegetables and dry dill. Then add salt and sugar, pour vegetable oil.

3. Prepare sour cream and adjika. These two components will give boiled crayfish a new taste for many. Pour the adjiki or tomato sauce into a saucepan.

4. Put all the crayfish into the boiling marinade and cover with a lid.

5. Boil the crayfish for 10 minutes, then pour in the sour cream.

6. Mix the crayfish thoroughly and boil for another 5-10 minutes. Turn off the heat and cover the crustacean with a lid. Crayfish must be infused in the resulting marinade so that they become juicy and tasty.

7. Serve boiled crayfish on a large platter with cold beer or dry wine.

Непереваренные остатки выводятся наружу через анальное отверстие, расположенное на тельсоне.

Кровеносная система у речного рака незамкнутая. Растворенный в воде кислород проникает через жабры в кровь, а накопившийся в крови углекислый газ через жабры выводится наружу. Нервная система состоит из окологлоточного нервного кольца и брюшной нервной цепочки.

Конечности

По бокам от рострума располагается две пары чувствительных усиков — антенны I и антенны II— и пара фасеточных глаз на подвижных стебельках. Ротовой аппарат состоит из шести пар конечностей: мандибул (верхних челюстей), двух пар максилл (нижних челюстей) и трёх пар максиллипед (ногочелюстей).

Переон (грудь), как и у других десятиногих раков, состоит из восьми сегментов и несёт восемь пар конечностей — три пары вошедших в состав ротового аппарата ногочелюстей и пять пар переопод (торакопод). Первая пара переопод (хелипеды) отличается большими размерами и несёт клешни, более крупные у самцов. Остальные четыре функционируют в качестве ходильных ног; первые две пары несут небольшие клешни, используемые для очистки тела и захвата пищи. От внешней стороны ногочелюстей и грудных ног в полость под карапаксом отходят преобразованные в ветвистые жабры эпиподиты.

Плеон состоит из шести отчётливо различимых сегментов и анальной лопасти — тельсона. У самок этот отдел тела шире, чем у самцов. Конечности первого сегмента у самцов преобразованы в копулятивный орган, а у самок частично редуцированы. Следующие четыре несут плавательные конечности — плеоподы (у самцов и конечности второго сегмента видоизменены). На последнем сегменте расположены уроподы и тельсон, образуя похожий на раскрытый веер хвостовой плавник.

Тело состоит из двух основных отделов (тагм) — головогруди, или цефалоторакса, и брюшка (плеона, абдомена). Естественная популяция резко сокращается в конце XIX и начале XX века, и в Европе почти полностью уничтожена чумой раков.
