A bright, flavorful dish, the Pepper Stuffed Pork Tenderloin is a great option for a healthy weeknight meal!

2 tablespoons oil
3 small sweet red peppers, finely chopped
1 large onion, finely chopped
2 small celery ribs, finely chopped
1-1/2 teaspoons dried thyme
3/4 teaspoon garlic salt
3/4 teaspoon paprika
1/2 teaspoon cayenne pepper
3 pork tenderloins (3/4 pound each)
4 teaspoons lemon-pepper seasoning
4 teaspoons fennel seed, crushed

Looking for something hearty and delicious to keep you cozy on these chillier fall nights? How about "The Best Beef Stew" by Taste of Home? Yum!

This is a low fiber meal, but high protein and filling. When preparing a stew like this, adjust the portion of meat recommended if you need more protein per serving. This version uses 1.5lbs of beef and yields 6 servings at 27g of protein per serving and 40g of carbs. I recommend increasing the beef to 2lbs and it will end up to 40g/serving.
