Let’s normalize REAL healthy lunches - the kind that taste good, reheat well, have high protein & fiber, and don’t require 47 ingredients.

As a nutrition therapist, here’s what I actually ate for lunch last week (aka proof that “healthy” can be a hodgepodge).

All of these were dinner leftovers:

✨Pan-seared salmon + butternut/kabocha squash soup + arugula salad (apples, avocado, sunflower seeds) + roasted Brussels & broccoli
✨Grilled chicken with leftover salad + roasted eggplant & sweet potatoes
✨Chicken Tikka masala with cauliflower/jasmine rice mix (leftover from dinner - always better the next day!)
✨Ground Lamb bowl with turmeric rice, tzatziki, hummus, tomato cucumber salad, and roasted beets
✨Pulled pork with roasted potatoes and simple cabbage slaw

No perfect plating. Just balanced, satisfying meals that are easy to heat up and make you feel good.

Aaand then went out for an amazing brunch on Saturday at and I got a burrito 😎🌯 (and split a cabbage soup).

❗hot tip: Dolina is one of the few restaurants in Santa Fe, NM that uses quality cooking oils (no seed oils)! They use all olive oil and ghee (other than in their fryer).

When you don’t have access to your kitchen - whether it’s a camping trip, a long road drive, or even a flight - the best way to stay healthy is to prep ahead.

And let’s be honest… these are also great meals/snacks to keep at home when you’re short on time!

These are the exact meals I packed for a recent 3-night music festival (we went to and it was AMAZING!).

What I love about these meals:

✅simple to prep

✅high in protein + fiber (so I stay full)

I wish I’d known this sooner because it’s transformed the way I help clients clear acne for good ✨

After working with acne clients for years, I’ve learned that to clear acne you need to understand WHY it’s happening. We need to know what is going on in the body that’s triggering acne!

Working on diet & running functional testing on my clients has helped me narrow it down to 4 different types of acne.

And here’s the thing: you can have more than one type of acne! I usually have clients who come to me with at least 2… & sometimes all 4.

These are other signs that I see in my clients when they have a specific type of acne -

‼️BLOOD SUGAR ACNE
Afternoon sugar/coffee cravings
Energy crashes
Waking up at night
Unexplained weight gain (esp around the belly)
Irritable/shaky

Imbalances in the gut microbiome can impact how you break down food & manage blood sugar. Diet changes are key, but you also need to work on gut health to have lasting results.

‼️POOR DETOX ACNE
Fatigue & sluggishness
PMS
Bloating/constipation
Body odor or bad breath
Puffiness, dull skin & dark under-eye circles

Poor detox often ties back to sluggish digestion, liver overload & hormone imbalances. Supporting all this helps your body detox effectively.

‼️POOR GUT HEALTH ACNE
Bloating and gas
Inconsistent bowel movements
Indigestion
Food sensitivities

When your gut is inflamed or imbalanced, it can trigger systemic inflammation, showing up as stubborn acne (yet some clients have zero digestive symptoms!). Balancing the gut is step 1 to clear skin. P.S. Gut issues are the most common trigger I see in my practice for chronic adult acne!

Waking up exhausted but feeling wired at night
Poor sleep quality
Irritability and mood swings

Stress doesn’t just disrupt cortisol - it also impacts the gut barrier and microbiome. We also need to support your nervous system and get you back into “rest and digest” so that healing can happen.

❓Why eat more protein? By eating more protein at breakfast, your blood sugar will be more stable throughout the day. Blood sugar spikes can worsen skin conditions like acne and negatively affect hormones, which can also trigger acne. Plus, blood sugar dysregulation causes cravings for poor dietary choices, which may lead to gut issues and bloating.

+ HYDRATION WITH LEMON & SALT: this helps support your liver to detox toxins, stimulates digestion, and balances electrolytes.
TIP: Start every morning with a glass of warm lemon water + salt.

+ GRATITUDE/MEDITATION: stress is a major factor in acne flare-ups. Practicing gratitude or meditation each morning helps reduce cortisol (your stress hormone), which directly impacts your skin’s ability to heal.
👉TIP: Take 5 minutes to focus on gratitude or deep breathing to start your day with calm, not chaos.

✨️Sometimes throwing things in a bowl just works so well.

These bowls are such a yummy summer meal with the fresh flavors of tzatziki, corn, cucumber and pickled onions!

Even though it’s all thrown into a bowl, this type of meal is still following the plating method I recommend for many of my clients:

✅1/2 plate veggies + healthy fat (cucumber, pickled onion, salad greens, avocado, tzatziki)

✅1/4 plate protein (chicken + hummus)

✅1/4 plate starch (rice + corn)

Mediterranean high-protein steak bowl! And yeah, feta makes everything taste better.

❓️If you had to choose ONE cuisine to eat forever, what would it be?

I think mine is Mediterranean. Is there anything more delicious in the summer than the combo of tomato, cucumber, herbs & feta?!

⬇️Here are the high-protein bowl details:
- Marinated steak (garlic, coconut aminos, lemon juice, balsamic, red pepper flakes)
- Lemon dill quinoa
- Parsley chickpeas
- Tomatoes
- Persian cucumbers
- Romaine
- Pickled red onions
- Feta

🔥Hot tip for feta if you have gut issues, acne or hormone imbalances:
I often ask my clients to avoid cow’s dairy, at least for a period of time. Cow’s dairy can significantly increase pain and inflammation, worsen acne, alter hormones & impair ovulation. However, goat and sheep dairy may be ok for many people.

❗️Important: make sure to check the ingredients if you buy feta cheese. For feta to be the real deal, it must be made from pure sheep's milk, or it can be a mixture of sheep's and goat's milk. Did you know that feta produced in the US and other countries outside the European Union can be made from cow’s milk or a combination of milks? The taste & health impacts will be very different if it’s made from cow’s milk instead of sheep’s milk!
