Let’s normalize REAL healthy lunches - the kind that taste good, reheat well, have high protein & fiber, and don’t require 47 ingredients.
As a nutrition therapist, here’s what I actually ate for lunch last week (aka proof that “healthy” can be a hodgepodge).
All of these were dinner leftovers:
✨Pan-seared salmon + butternut/kabocha squash soup + arugula salad (apples, avocado, sunflower seeds) + roasted Brussels & broccoli
✨Grilled chicken with leftover salad + roasted eggplant & sweet potatoes
✨Chicken Tikka masala with cauliflower/jasmine rice mix (leftover from dinner - always better the next day!)
✨Ground Lamb bowl with turmeric rice, tzatziki, hummus, tomato cucumber salad, and roasted beets
✨Pulled pork with roasted potatoes and simple cabbage slaw
No perfect plating. Just balanced, satisfying meals that are easy to heat up and make you feel good.
Aaand then went out for an amazing brunch on Saturday at and I got a burrito 😎🌯 (and split a cabbage soup).
❗hot tip: Dolina is one of the few restaurants in Santa Fe, NM that uses quality cooking oils (no seed oils)! They use all olive oil and ghee (other than in their fryer).
