-Pork sausage, I made into balls, mixed with homemade pesto and bread crumbs
-peppers, onions and carrots

Cooked in a type of Korean bbq style sauce.

A simple, quick, healthy sauté of sliced cabbage, white onions, portabellas, peas and chicken, with a touch of minced garlic, grapeseed oil and seasoning.

Tostones is on the stove today.

Tostones (also known as Patacones) are slices of unripe, green plantains that have been fried, smashed, and fried again until crisp. Then, traditionally, drizzled with a fresh squeezed lime and kosher salt.

Living in Miami, Latin food was everywhere to have and to love. It’s when you move away that you realize you have taken it for granted; that it will always be accessible. So, you do the next best thing, you make it at home.

This is an excellent potato replacement, or chip replacement. It can be a vehicle for nachos, or topped with jelly. Endless possibilities.

Farm raised ground pork from Woods Farm Market, zucchini and Havarti cheese 🧀 frittata, topped with tomatoes and scallions. Served with farm fresh mix greens and berries in a honey-balsamic dressing.

It’s how we brunch.

Fresh, organic sweet potatoes 🍠, zucchini, spinach and chicken 🐔, sautéed in olive oil and minced garlic, topped with an avocado 🥑 and a dash of Tabasco.

Nothing complicated here. Just a good breakfast/brunch meal.

A little trick so water doesn’t boil over.

The Wooden Spoon Trick works in two ways.
When something hydrophobic (i.e. unable to absorb water) punctures the surface of a bubble, it subsides. A dry wooden spoon destabilizes the bubbles when they come into contact with its water-repelling surface. This makes the boiling water retreat.

I am not a celebrity. I have not been on reality TV. I do not claim to have invented the wheel here. However, I am the classic example of someone who jumped into the restaurant/catering business head on, and learned everything and anything about it. Here I am 36 years later still in it.

Although I have not owned my own restaurant, my path decided to give “sweat equity” to other businesses, helping them grow and also learning from some amazing mentors.

So I say, vote for the little guy (woman..lol).

A beautiful cake my Grandmother Rose always made for special occasions, Chocolate Ricotta Cake (not to be mistaken with “cannoli cake or, as Italians call it, “Cassata cake”).
A tradition I am happy to pass on.

A basic chocolate cake mix in the pan, then a mixture of ricotta, sugar, eggs and vanilla is poured over the top and it floats to the bottom.

Here, I have it topped with vanilla pudding, orange zest, raspberries and blackberries.

I love the memories this cake has given me.
