Let’s get the year started with a delicious and flavorful bowl! Here’s and inspiration of a quick and healthy meal packed with proteins and vitamins.

To put it all together we need:

• Salmon
• White rice (or brown for a higher fiber option!)

• Cucumber

Seriously, big oat bowls like these are our favorite—packed with ginger, antioxidants, and all the energy you need to get your busy day started. In this bowl, we have all this good stuff:

‣ cooked whole grain oats
‣ frozen blueberries
‣ sliced banana
‣ chopped apple
‣ flax seeds
‣ chia seeds
‣ h**p seeds
‣ lots of cinnamon
‣ a bit of plant milk for consistency

This dinner was so good—filling, tasty, and full of vitals and antioxidants. It doesn’t look it at first glance, but it’s actually hefty in protein. Hearty produce, satisfying grains, and bursts of flavor all come together here for one of the best dinners I’ve ever had.

What we used:
‣ cooked broccoli
‣ kale sautéed in olive oil
‣ cooked quinoa
‣ brown rice
‣ shredded carrots soaked in balsamic vinegar
‣ two poached eggs
‣ scallions, cumin, pepper, paprika
‣ soy sauce

This southwest roast veggie bowl is full of delicious vegetables and packed with nutrients. We cooked our veggies in olive oil for those healthy fats and we recommend adding a unit of protein for balance. Here’s what we used:

‣ peas
‣ sweet potato (oven-roasted)
‣ yellow zucchini
‣ carrots
‣ broccoli
‣ salt, pepper, garlic powder, curry powder, thyme

We’re all about the nut butter + fruit combo—tastes delicious, helps control spikes in blood glucose, and supplies you with plant-based protein and healthy fats. That’s why this bowl is so great! Here’s a list of what we threw in there, but feel free to adjust the ingredients to your personal faves next time you build your bowl.

We love muesli! An excellent source of fiber + whole grains, and it’s absolutely delicious. Muesli can rival any cereal in our book. We made a big muesli bowl, packed with apples for fiber, bananas for nutrients, flax and chia for fiber, vegan protein, and healthy fats, and lots of cinnamon! We recommend a splash of soy milk for extra protein or your favorite plant based milk.

‣ Fresh corn
‣ Cooked quinoa
‣ Black beans
‣ Diced tomato

‣ Cooked chicken

Interested in the Mediterranean diet? Then this flatbread is perfect for you! You can pack it with all kinds of veggies, but here’s our favorite way to make it:

‣ Warm whole grain pita
‣ Cucumber
‣ Tomato
‣ Cooked falafel
‣ Hummus
‣ Olive tapenade
‣ Paprika
‣ Kale (optional)

Our favorite hummus to use for this is the Mediterranean Style Hummus, which already comes with spices and pine nuts! In our opinion, this sandwich is the BEST with super warm pita!

This big plate hits all our markers: over 1/2 the plate is delicious veggies, we have protein in the eggs, and the beans give us that satiety-inducing combo of fat, protein, AND fiber! Anybody else love the veggie + sunny side up egg pairing?

Simply cook the following vegetables in a mix of olive oil, soy sauce, and chicken broth:
‣ Broccoli
‣ Mushrooms
‣ Onions
‣ Carrots
‣ Kale
‣ Brussel sprouts
Meanwhile, cook two sunny side up eggs. Top seasoned black beans with the veggies and eggs, add salt, pepper, garlic powder, and cumin, serve warm, and enjoy!
