{GF + DF} Classic + Comforting Creamy Chicken Noodle Soup

The temps dropped this week & I was craving something classic, comforting, & warming…plus I had leftover noodles in the fridge that I needed to use…and voila! This recipe was born 😋

INGREDIENTS:
1 tbsp salted butter
! medium yellow onion, diced
2 large carrots, diced
3 celery stalks, diced
3 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
1 1/2 tsp dried thyme
1/2 tsp oregano
2 tbsp arrowroot flour
4-8 cups bone broth* (see note below)
1 medium yukon gold potato, washed + diced
1.5 lbs shredded chicken breast (you can use rotisserie too)
1 cup whole milk, heavy cream, or coconut milk (from the can)
12 ounces gluten free dry pasta* (see note below)

*If you are using leftover cooked noodles you will need less bone broth. I recommend starting with 4 cups and then assessing how thick you want your soup AFTER adding in the cup of milk. If you want a thinner soup add in more bone broth at that time.

DIRECTIONS:
-Melt butter in a large pot or dutch oven over medium heat. Add onion, carrots, celery, and garlic. Cook for 5 minutes, stirring occasionally, until vegetable have softened.
-Stir in salt, pepper, thyme, and oregano and cook for another minute.
-Add in arrowroot flour and stir to make sure vegetables are well coated. Slowly pour in bone broth. Again, the amount will vary on whether or not your are using cooked or dry noodles.
-Add potatoes and give everything a quick stir. Increase to medium-high heat and bring broth to boil. Reduce heat to medium-low, cover the pot, and allow to simmer for 10-13 minutes or until potatoes have softened.
-Add shredded chicken, milk of choice, and dry/wet noodles.
-*If using dry noodles, cook for 10-12 minutes until the noodles are tender and the soup has thickened.
-*If using cooked noodles, cook for 5 minutes to allow flavors to blend together. You can always add more bone broth here to receive your desired consistency.
-Taste the soup and add more seasoning as desired.
-Serve it on up and enjoy!

HEAR ME OUT.

Whenever I tell people that I am a Health Coach, 9 times out of 10 the person responds with “Oh, I’m on the X diet” or “I’ve lost 12 pounds over the past few months by eliminating XYZ”.

Between you, me, and the social media stalkers…it takes everything in me not to scream. “THAT’S NOT THE POINT!”

First and foremost, I see you.

I know how hard it can be to lose weight. I know the time, the dedication, the agony, and I know how rewarding it feels to see the number on the scale drop or to feel your clothes loosen or fit better than they have in the past, and I am by no means diminishing your achievements.

However, to me, as a holistic health coach… the real rewards are not numerical.

They are mental, they are energetic, and they are more powerful than any number on the scale or listed on the tag in your jeans.

Stay with me here…

Because if you don’t do the deep work on yourself BEFORE you lose the weight, your lowest weight will never be enough.

(and I speak from experience here)

You will always be chasing the next lowest number or the next size down in your jeans.

When what you really need to be focusing on is… how you feel about yourself, how you love yourself, how you speak to yourself when no one is around.

This is the deeper work.

This is the work that will stick with you when you naturally fluctuate in body weight.
This is the work that will stick with you when you flow in & out of different seasons in your life.
This is the work that will keep you going consistently & not have you starting over every Monday for the rest of your life.

…and I can bet that when you start doing this work, your physical goals will follow suit.

The Fluffiest Greek Yogurt Gluten Free Pancakes 🥞

I have been focusing on getting more protein into each meal, without having to give up some of my favorites.

Now you know I already hopped on the cottage cheese bandwagon and made pancakes that way, but I’ve been out of cottage cheese and on a Greek yogurt kick so I thought, why not?

It took a couple tries but these are so fluffy, I love the flavor, and are even more delicious when you add a simple berry compote (frozen berries + coconut oil) on top!

Oh and did I mention how easy they are to make?

This recipe makes about 10-12 pancakes depending on the size.

1 1/2 cups greek yogurt
1 cup gf flour
2 eggs
1-2 tbsp maple syrup
1 tsp vanilla extract
1 tsp baking powder

Mix everything in a bowl, butter your skillet over med low heat, and watch the pancakes fluff up so perfectly!
