{GF + DF} Classic + Comforting Creamy Chicken Noodle Soup
The temps dropped this week & I was craving something classic, comforting, & warming…plus I had leftover noodles in the fridge that I needed to use…and voila! This recipe was born 😋

INGREDIENTS:
1 tbsp salted butter
! medium yellow onion, diced
2 large carrots, diced
3 celery stalks, diced
3 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
1 1/2 tsp dried thyme
1/2 tsp oregano
2 tbsp arrowroot flour
4-8 cups bone broth* (see note below)
1 medium yukon gold potato, washed + diced
1.5 lbs shredded chicken breast (you can use rotisserie too)
1 cup whole milk, heavy cream, or coconut milk (from the can)
12 ounces gluten free dry pasta* (see note below)
*If you are using leftover cooked noodles you will need less bone broth. I recommend starting with 4 cups and then assessing how thick you want your soup AFTER adding in the cup of milk. If you want a thinner soup add in more bone broth at that time.
DIRECTIONS:
-Melt butter in a large pot or dutch oven over medium heat. Add onion, carrots, celery, and garlic. Cook for 5 minutes, stirring occasionally, until vegetable have softened.
-Stir in salt, pepper, thyme, and oregano and cook for another minute.
-Add in arrowroot flour and stir to make sure vegetables are well coated. Slowly pour in bone broth. Again, the amount will vary on whether or not your are using cooked or dry noodles.
-Add potatoes and give everything a quick stir. Increase to medium-high heat and bring broth to boil. Reduce heat to medium-low, cover the pot, and allow to simmer for 10-13 minutes or until potatoes have softened.
-Add shredded chicken, milk of choice, and dry/wet noodles.
-*If using dry noodles, cook for 10-12 minutes until the noodles are tender and the soup has thickened.
-*If using cooked noodles, cook for 5 minutes to allow flavors to blend together. You can always add more bone broth here to receive your desired consistency.
-Taste the soup and add more seasoning as desired.
-Serve it on up and enjoy!
