I need to clean out the freezer! I have extras of a variety of meals that I have made in the last month for various reasons. Slightly discounted prices, when they are gone, they are gone for this price. I may have more tucked away and I will add when I am able to clean it all out.

Buffalo Chicken Meatball Soup! Inspired by Italian Wedding Soup.

This morning I made Buffalo Chicken Meatballs with the intention of using them for soup. Meatballs made with almond flour to increase protein a smidge and add a little fiber, also makes them gluten free. After work, all that needs to be done is add cream cheese, spinach and ditalini pasta. I may use greek yogurt or blended cottage cheese instead of cream cheese. I will report back.

Meal Plan Sunday! I love Sunday. It's like a fresh start every week. No surprise, meal planning is my favorite thing to do. Ex*****on is my downfall. "If you fail to plan, you plan to fail."

I have a lot of after-hours to-dos this week. I have a two-week vacation in less than 30 days. I have no time to mess around. I'm planning and prepping all of my meals for this week, today.

Starting with Enchilada Quinoa Chili in the slow cooker. What does your Sunday look like?
