These Chocolate Zucchini Muffins may have a longer recipe, but judging by how delicious they look, the effort is totally worth it! 🍫🥒

Here’s what you’ll need:

2 cups almond meal (not almond flour)

1/4 cup coconut flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon sea salt

1 large ripe banana, mashed

1/4 cup unsweetened almond milk

3 eggs

1/4 cup honey or your favorite natural sweetener

1 teaspoon vanilla extract

1 large zucchini, grated

Instructions:

1. Preheat your oven to 350°F.

2. In a large bowl, mix the almond meal, coconut flour, cocoa powder, baking soda, baking powder, and sea salt.

3. In a separate bowl, combine the mashed banana, almond milk, eggs, honey, and vanilla extract.

4. Pour the wet ingredients into the dry and stir until combined.

5. Place the grated zucchini between two layers of paper towels or a clean dish towel and squeeze out excess liquid.

6. Add the zucchini to the batter and mix well.

7. Grease a 12-cup muffin tin or line with muffin cups, then evenly distribute the batter.

8. Bake for about 25 minutes or until the tops spring back when lightly pressed.

9. Let muffins cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.

Looking for a gluten-free bread option that doesn’t require a dozen unfamiliar ingredients? 😅

So many recipes are overly complicated or packed with additives. This Lentil Flatbread is refreshingly simple, as well as super versatile. Use it for toast, pizza crust, tacos, or enjoy it on its own with your favorite seasonings. 🙌

All you need:

1 cup split red lentils

2 cups filtered water

1/2 tsp salt

Instructions:
➡️ Rinse the lentils well until the water runs clear.
➡️ Add lentils and water to a blender and let them soak for at least 15 minutes (or overnight for convenience).
➡️ After soaking, blend until smooth (about 1 minute). Let the batter sit for another 15 minutes to thicken.
➡️ Add salt (and any favorite spices like garlic powder, cumin, or herbs) and pulse to mix.
➡️ Preheat a non-stick skillet on low heat and lightly spray with avocado or olive oil.
➡️ Stir the batter, then pour onto the skillet using a measuring cup. Spread into a thin layer.
➡️ Cook for 2–3 minutes per side. Flip gently with a wooden or silicone spatula.
➡️ Cool on a wire rack.

That’s it! Perfect for quick meals or prepping ahead.

Dark Tea May Help Manage Diabetes Risk 🍵

Researchers from the University of Adelaide in Australia and Southeast University in China have discovered that dark teas, such as black tea and oolong tea, contain compounds called theaflavins and thearubigins. These compounds are linked to improved glucose metabolism and better insulin sensitivity, making dark tea a promising choice for those at risk of or managing diabetes.

🔥 The study suggests that drinking dark tea may help regulate blood sugar by enhancing insulin activity and reducing inflammation. These effects can support better glycemic control and lower the risk of developing type 2 diabetes. More research is still needed to fully understand how these benefits work and to determine the best amount to drink, but this is a promising development in the research on diabetes management.
