Wondering what to make for brunch this glorious Sunday? I was putting together recipes for a client this morning and ran across this super simple pancake recipe. The kids, young and old, will love this!
Easy Breezy Gluten Free Pancakes with Texas Peach Compote Makes 6-8
1 large just ripe banana, peeled and quartered*
2 large eggs
½ teaspoon vanilla extract
Water to desired consistency
2 cups coarse chopped ripe peaches (apples, pears, or berries will do too)
Pinch of “sea” salt
2 TB real honey or agave syrup for lower glycemia version
Coconut oil spray (any spray oil or butter will do)
Add peaches, salt and honey to a large saucepan. Bring to simmer for about 10 minutes and transfer to a glass container. This compote will keep in the fridge for up to 2 weeks.
While fruit is simmering, smash and cream banana with a fork. Add vanilla and eggs and whisk until smooth and creamy. Add a little water for a thinner crepe-like pancake. (A processor or hand held mixer can be used to make this in a flash!). Notes: Less ripe (but not green) bananas will have less banana flavor and create a thicker consistency. A little lemon zest or juice will eliminate the banana flavor all together.
Heat griddle to 350F or use large pan on medium high. Turn down to medium after heated. Lightly spray the griddle with oil or rub with butter only where you are pouring the batter. Pour batter on top of oil to create a 4” pancake (bigger is hard to flip). Cook for about 3 minutes or until golden on bottom. Flip and repeat. Transfer to sheet pan and place in a warm oven until ready to serve.
It doesn’t get any easier, healthier, or more delicious than this! Play around! Fold in chocolate chunks or nuts. Add other sweet spices like cinnamon. Top with peanut butter and honey! Make impressive, healthy dessert crepes with the mousse and whipped cream recipe in the comments.
Helpful Tip: These pancakes are a little more fragile than the standard, so make them smaller. It may take a few attempts to get the hang of flipping these new cakes. Make a test batch first, so you look like a seasoned pancake flipper
