July Instructor of the Month: Jen!

Jen is a native to Lehigh Valley and has been teaching in the community for over ten years as a yoga and mindfulness teacher, personal trainer & group fitness instructor. Jen has over 500 hours in yoga training experience with a focus on trauma informed practices. With a passion in wanting to develop her on personal practice, Jen took her studies to Thailand, Bali and India where she learned holistic methods to healing and connecting the mind and body through breath-work, movement and meditation. Jen’s therapeutic yoga approach provides a safe space for everyone to create their own unique yoga experience and develop relaxation techniques to practice both on and off the mat. Jen also fills in teaching bootcamps, functional movement and cardio classes. When Jen's not teaching classes, she loves spending time in nature, cooking new healthy recipes, traveling the world, and relaxing with her little Yorkie, Macy.

LIKE TO VOTE: Summer Cucumber Salad

Ingredients:
🔹2-3 peeled cucumbers
🔹1 cup white vinegar
🔹½ cup mayonnaise (can substitute Plain Greek Yogurt for more protein, less fat option)
🔹3 tbsp sugar or 2 tbsp Stevia
🔹2 tbsp chopped garlic
🔹2 tbsp dill (can use dry or fresh)

Peel and slice cucumbers.

Combine all other ingredients in a bowl.

Add cucumbers to bowl and chill for an hour or more before serving.

🔹2 cans (15-1/2 ounces each) black-eyed peas, rinsed and drained
🔹2 cups grape tomatoes, halved
🔹1 each small green, yellow and red peppers, finely chopped
🔹1 small red onion, chopped
🔹1 celery rib, chopped
🔹2 tablespoons minced fresh basil

dressing:
🔹1/4 cup red wine vinegar or balsamic vinegar
🔹1 tablespoon stone-ground mustard
🔹1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
🔹3/4 teaspoon salt
🔹1/2 teaspoon freshly ground pepper
🔹1/4 cup olive oil

In a large bowl, combine peas, tomatoes, peppers, onion, celery and basil.

For dressing, in a small bowl, whisk vinegar, mustard, oregano, salt and pepper. Gradually whisk in oil until blended. Drizzle over salad; toss to coat. Refrigerate, covered, at least 3 hours before serving

LIKE TO VOTE: Sweet chili glazed salmon

🔹1½ pounds (or four 6-ounce pieces) salmon, skin on or off
🔹6 tablespoons Thai Sweet Chili Sauce (best quality, such as Mae Ploy or Thai Kitchen)
🔹3 tablespoons soy sauce (use gluten-free if needed)
🔹1 tablespoon peeled and finely grated fresh ginger (see note)
🔹2 scallions, green parts only, finely sliced

Set the oven rack 5-6 inches from the top and preheat the broiler.

Make the marinade by combining the sweet chili sauce, soy sauce and ginger in a shallow baking dish. Spoon ¼ cup of the marinade into a small dish and set aside (this will be the sauce for the cooked fish). Add the salmon fillets, skin side up, to the remaining marinade and marinate for 1 hour in refrigerator.

Line a rimmed baking sheet with aluminum foil and spray with nonstick cooking spray. Transfer the salmon fillets to the prepared baking sheet, skin side down, and drizzle a bit of the marinade over top. Go easy -- you don't want it to pool too much on the baking sheet because it will burn in the oven. Broil the salmon for 6-10 minutes, or until browned in spots and almost opaque in the center. Transfer the salmon to a serving platter and pour the reserved sauce over top. Garnish with scallions and serve.
