Ingredients:

1 pound boneless, skinless chicken breast, thinly sliced
1 tablespoon cornstarch
2 tablespoons soy sauce (low-sodium)
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon grated ginger
1 clove garlic, minced
2 cups assorted vegetables (broccoli florets, bell peppers, snow peas, carrots)
1/4 cup chopped green onions
Cooked brown rice (for serving)

Instructions:

1. In a bowl, combine chicken slices with cornstarch, soy sauce, rice vinegar, sesame oil, ginger, and garlic. Let marinate for 15 minutes.
2. Heat a large wok or skillet over medium-high heat. Add a drizzle of oil.
3. Stir-fry vegetables for 3-4 minutes, or until slightly softened and crisp-tender. Remove from the pan and set aside.
4. Add a little more oil to the pan if needed. Increase heat to high.
5. Stir-fry chicken for 5-7 minutes, or until cooked through and golden brown.
6. Return vegetables to the pan and stir-fry for an additional minute to combine.
7. Serve over cooked brown rice and garnish with chopped green onions.

5-Minute Morning Stretching Routine

Minute 1: Neck and Shoulder Stretch
Neck Rolls: Roll your head in a circle, 5 times each direction.
Shoulder Shrugs: Lift and release shoulders 10 times.

Minute 2: Upper Body Stretch
Chest Opener: Clasp hands behind your back and lift for 30 seconds.
Side Stretch: Raise one arm overhead and lean to the side. Hold for 15 seconds each side.

Minute 3: Lower Body Stretch
Forward Bend: Stand and reach for your toes. Hold for 30 seconds.
Quad Stretch: Pull your ankle to your glutes. Hold for 15 seconds each side.

Ingredients:

β€’ 1 cup dry brown lentils
β€’ 4 cups vegetable broth
β€’ 1 tablespoon olive oil
β€’ 1 onion, chopped
β€’ 2 carrots, chopped
β€’ 2 celery stalks, chopped
β€’ 2 cloves garlic, minced
β€’ 1 (14.5 oz) can diced tomatoes, undrained
β€’ 1 teaspoon dried thyme
β€’ 1/2 teaspoon ground cumin
β€’ Salt and pepper to taste
β€’ Fresh herbs (optional): chopped parsley, cilantro


Instructions:

1. Rinse lentils and set aside.
2. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. SautΓ© for 5 minutes, or until softened.
3. Add garlic and cook for an additional minute.
4. Stir in lentils, vegetable broth, diced tomatoes, thyme, and cumin. Season with salt and pepper.
5. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
