In today’s Sourdough 101 class, we learned how to care for starters, create dough, and bake bread. One of the demonstrations is how to use inclusions. I created this Garlic Rosemary loaf and brought it home to bake! Isn’t it gorgeous?

This is a sourdough 101 class. It's an easy-to-follow class for beginners with little to no experience. We will walk through making a loaf of sourdough, caring for your starter, and how to troubleshoot both of these processes. We will provide you with everything you'll need during the class and you'll leave with an established starter as well as the dough we make in class for you to take home and bake.

I wish I would have taken pics of the process of baking this loaf. It was a good lesson in trusting your starter and always following through. I’ve never thrown dough out when it doesn’t “feel right.” I either turn it into focaccia or I bake and pray for the best results. This was a case of bake and pray. When I shaped this loaf it was tacky to the point I had to add flour to keep it from sticking to everything. When it went into my Dutch oven, it was flat and wouldn’t hold its shape. When I tell you I was shook when I took the top off of my Dutch over mid bake and found this beautifully risen loaf, I mean it. It came out perfectly and the taste was amazing! As soon as it cooled, it was gone, I didn’t even have time to grab a crumb shot. The boys devoured it!

When we went to Michigan to visit family for Thanksgiving, we drove through Wisconsin where I purchased a hard white cheddar with blueberries and I just knew it would make a beautiful loaf of bread. And it did! My only regret is that I didn’t buy more of it!

It’s the season for CRANBERRIES!!!

Cranberries are a beautiful superfood packed full of nutrients and antioxidants! They are also amazing for our urinary tract health! Let’s chat a little bit about some of my favorite ways to prepare and preserve them for use all year long. You can tincture them, dehydrate them but my favorite preparation is to make a honey ferment with them. The honey ferment can be used for tea, atop desserts or sweet breakfast foods, or even as a spread for your homemade sourdough! If you’d like a video on how to make a cranberry honey ferment, comment below!

No matter how I prepare them, the first step is to pop them open, which you can do by squeezing them between your fingers. Can you say satisfying???

For those of you in the Sourdough 101 class today, the Hot Cocoa experiment has been baked and the flavor is amazing, but I’ll def have to find an alternative to using marshmallows. I’m going to try Fluff and Freeze Dried Marshmallows to see what works best. The loaf is dense and super moist. My husband and kids LOVE IT, but they also love anything sweet. I think it is too wet. I’ll keep you updated! Thank you for joining me on this journey! I appreciate each and every one of you!

Thank you for your interest in the Sourdough 101 class. I'm really humbled by the interest shown and am so excited for another opportunity to share my love of sourdough making with the community. We are welcoming back Adrienne Ponder from Ponder's Peckers as a co-instructor and truly love what she adds to the class. Space is limited to 20 people for the class in December. If the class fills, I will announce spaces as they open up. Please be sure you like and follow our FB page, open spots will be announced there. There will also be another opportunity in February to attend if this date/time does not work for you.

I’m about to nerd out! This is a sourdough starter from one of our students. In the class, we used my established starter to create her baby starter. But as you can see, this baby starter is already thriving. The initial feed was at 7pm in the evening and has more than doubled in size in an appropriate amount of time. That’s a sign that the starter is ready to make some bread!!!

If you are interested in learning more about the sourdough making process, stay tuned. We’ll have another beginner’s class in December.
