🍀Happy St. Patrick’s Day from these Leprechauns!🍀

If you’re just dabbling with green smoothies, this one’s for you! It gets its sweetness from the fruit, probiotics from the yogurt, potassium, vitamin K, vitamin c, extra fiber, and it’s green color from the spinach. But, you can’t even taste it, I promise!

To really boost its nutrient value, considering adding a teaspoon of ground flax seed, chia seed, h**p seed, or all three. These add extra protein, fiber, and omega-3 fatty acids, which are anti-inflammatory.

Peaches N’ Greens Smoothie
Makes 4 Cups

Ingredients
1 cup frozen peaches
1 cup frozen pineapple
1 ripe banana
1/2 cup orange juice
1/2 cup milk of choice
1/2 cup plain Greek yogurt
Handful of spinach

Directions: Add all Ingredients to blender and blend until smooth. Add more liquid depending on desired consistency.

Really excited to have passed my exam and earned the title of Certified Gastrointestinal Nutritionist!

What does a Certified Gastrointestinal Nutritionist do?

I help people with stomach problems!!

I provide guidance and support on dietary changes and supplements to complement a wide variety of gastrointestinal conditions including IBS, Inflammatory Bowel Disease, Crohn’s Disease, Ulcerative Colitis, Celiac disease, Small Intestinal Bacterial Overgrowth, diarrhea, constipation, gas, bloating and so many more!

This area of nutrition is such a passion of mine and one I fell into (Hello Crohn’s Disease!). I am thankful to have one more tool in my toolbox to help my clients feel their best!!

The past three days at PAND’s AME 2022 Conference were nothing short of amazing! To be surrounded by so many dedicated, progressive, hard-working, and gracious women was inspiring and invigorating.

Our comedy show to raise money for the Pennsylvania Academy of Nutrition and Dietetics’ Political Action Committee (PANDPAC) was a total success! There are too many people to name but I am in awe of their abilities, drive, and endless support to make this 3-day event unbelievable!

I enjoyed every minute of moderating speaker sessions, judging the poster sessions, participating in so many spectacular speaker sessions, raising money for a cause I am passionate about, and meeting and connecting with so many students, colleagues, and friends. I also had so much FUN and am so lucky to call these amazing women my friends.

To say I am energized is an understatement. I am so excited for the next year to serve as Public Relations Chair and PANDPAC Chair and can’t wait for AME2023!!!!

I was so happy to volunteer at the Patrician Society in Norristown today to help provide food to dozens of families (72 the last time I was there!) during my few hours there! I’m looking forward to helping so many more!! 🙌🏻

Bowl meals are the PERFECT way to utilize leftovers and kitchen and pantry essentials. You can take a look to see how I put this one together!

Select a variety of colors and textures then bathe it all in a delicious dressing. You can check out the recipe for one here too!

TIP: Dressings can also double as marinades. Try the Lemon-Dill dressing here as a topping for roasted salmon or chicken - so yummy!

I was honored today to meet with Senator Toomey’s and Senator Casey’s staff to advocate for more widespread Medical Nutrition Therapy access and coverage for Medicare recipients and Child Nutrition. Advocacy to make my services available for anyone who wants them is important to me. 🙌🏻

🌟🌟I’m challenging myself to run/walk 1000 miles in 2022 through www.1000milechallenge.org.🌟🌟

I’ll be earning 25 cents for every mile with proceeds going to the Crohn’s and Colitis Foundation.

Crohn’s disease is a silent illness meaning you oftentimes can’t see the symptoms of the illness and those impacted suffer in silence. My ability to cover these miles is truly a gift because during my own flares, even a walk can be too much.

My life in many ways is dedicated to helping others who suffer from Crohn’s disease by improving their nutrition and well being. Almost every decision I make about my own health surrounds keeping my Crohn’s disease in remission so I can be the absolute best for my family.

Stay tuned as I post updates on my progress over the course of the coming year. I’ve hit 25 miles so far!!

🌟🌟Happy Healthy New Year!!!🌟🌟

In addition to traditional pork and sauerkraut, I added this dish of black eyed peas with braised kale and tomatoes to our New Years Day celebration. I added cooked beans to a pot with diced tomatoes, kale, and plenty of seasonings. I added a splash of leftover red wine and about 2 cups of vegetable broth, and simmered everything for about 15 minutes. Yummmm!!!

Black-eyed peas are a southern tradition and symbolize luck and money while the kale symbolizes money and good fortune for the coming year.

If you’re worried about beans being difficult to digest, rest easy because black-eyed peas are one of the more easily digested beans due to their low sugar (oligosaccharide) content. Also, rinsing them after soaking can remove a starch called raffinose which can be gas-producing. Lastly, adding a piece of kombu (seaweed) to the water as they are cooking adds an enzyme that helps to break down raffinose further.

Beans and greens is a delicious dish full of antioxidants and beneficial fibers. It’s a great way to set your intentions for the New Year!

🍁🎃First Day of Fall = EVERYTHING Pumpkin!!!🎃🍁

Pumpkin is one of my fall favorites, and I love seeing how many ways I can use it. From sweet to savory and salty to spicy, I’ll be trying them all!

Pumpkin is high in vitamin A and it has lots of soluble fiber. Pumpkin also contains the antioxidants alpha-carotene, beta-carotene, and beta-cryptoxanthin which may protect against free radical damage. It’s high in nutrients and low in calories and is an easy-to digest option this time of year. If you suffer from IBS, 1/3 of a cup of pumpkin is considered low FODMAP.

These bites are great for a snack, perfect before or after a workout, or can even be a breakfast or a dessert. Enjoy and Happy Fall!!
