🫐 Sweet Blueberry Buttermilk Biscuits

Bake: 15–18 minutes

8 biscuits

🧾 Ingredients
🥐 Biscuits
2 cups all-purpose flour
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
2–3 tbsp sugar (adjust to taste)
½ cup cold unsalted butter (cubed)
¾ cup cold buttermilk
1 cup fresh or frozen blueberries
🍯 Optional Glaze
½ cup powdered sugar
1–2 tbsp milk or lemon juice
½ tsp vanilla extract
👩‍🍳 Instructions
1. Preheat oven

Preheat to 220°C (425°F) and line a baking tray with parchment paper.

2. Mix dry ingredients

In a large bowl, whisk together:

Flour
Baking powder
Baking soda
Salt
Sugar
3. Cut in butter
Add cold butter cubes.
Use a fork or fingers to mix until it looks like coarse crumbs.
👉 Small butter chunks = flaky biscuits!
4. Add buttermilk
Pour in cold buttermilk and gently mix until just combined.
Do NOT overmix.
5. Fold in blueberries
Carefully fold blueberries into the dough.
👉 If using frozen, don’t thaw (prevents color bleeding).
6. Shape dough
Turn dough onto a floured surface.
Gently pat into a 1-inch thick rectangle.
Fold once or twice for layers, then cut with a biscuit cutter.
7. Bake
Place biscuits on tray (slightly touching for softness).
Bake for 15–18 minutes until golden.
8. Glaze (optional)
Mix glaze ingredients and drizzle over warm biscuits.

Keep everything cold for best texture
Don’t overwork the dough (prevents tough biscuits)
Add lemon zest for extra flavor 🍋
Sprinkle sugar on top before baking for a sweet crust

👉 Mix:

¾ cup milk + 1 tbsp lemon juice or vinegar
