After graduating from South Dakota State University, with a degree in Dietetics, Kim Fox continued her education, becoming a Registered and Licensed Dietitian and Certified Diabetes Educator. She worked in several hospitals as an inpatient and outpatient dietitian, and served as a nutrition consultant to skilled nursing facilities, a large hospice and home health care agency, and group homes for p

eople with developmental disabilities and mental illness. Through these vast and varied experiences Kim founded Fox Nutrition & Diabetes Services to more effectively assist people in caring for their diabetes, eating more nutritiously, and managing their weight with better outcome. The idea was to create nutrition, exercise and meal plans to suit each client individually. Follow-up through coaching, counseling, teleclasses, and email is what ensures proper implementation and positive results. Over the years Kim has assembled a team of equally qualified nutrition and diabetes professionals who subscribe to her personalized approach, have a passion for serving their clients and work with them to meet their goals. Today Fox Nutrition & Diabetes Services has a large and growing base of loyal and satisfied clients who report:

May is Mental Health Awareness Month, and I had so much I wanted to share. Life, however, doesn’t always go as planned and for my own mental health, I’ve had to let go of some aspects of my business, including social media.

My husband Rick developed tongue cancer in 2017. Every time things got better, and we started to live again, the cancer returned. We are now in battle #4, but this time the disease has spread to multiple sites in Rick’s throat, neck, armpit and clavicle. I should have been a nurse instead of a dietitian, as I have now become quite proficient at wound care, trach cares and suctioning, ordering medical supplies, and talking the “medical lingo” with oncology, cardiology, dermatology, palliative care, and upcoming physical therapy. I could no longer manage it all and felt my time was needed caring for my husband instead of running a business.

I’m not sure what the future holds. I still provide nutrition consultation services for several group home companies in the metro area and for now, that seems to be enough. I might start taking insurance and see patients virtually depending on how Rick does over the next few weeks and months. Mental health and all that is associated with it are my passions, so hopefully, someday, I can jump back in it.

April 16-22 is Oral, Head and Neck Cancer Awareness Week. This is something that hits home with me as my husband Rick was diagnosed with tongue cancer in 2017. He was never a smoker; this was due to a virus that had been lying dormant in his body for 30 years or more, just waiting for the conditions to be right, to rear its ugly head. The only symptoms were visibly enlarged lymph nodes. Our physician didn’t feel it was cause for concern but sent Rick to ENT for follow-up, who also didn’t note anything suspicious. In time, another node appeared. We saw another ENT, who took one look at Rick, saying “You have cancer”, and performed the necessary tests to confirm.

It has been years of chemo, radiation, surgery, and now immunotherapy, as Rick has battled tongue cancer three times, and is battling cancer again, but this time in other areas of his throat and lymph nodes. This type of cancer has affected Rick’s ability to swallow and communicate, on top of the usual things’ cancer does to the body like weight loss, fatigue, and discomfort and pain. What has gotten us through all these years is our faith in Jesus Christ, a huge support system of faith-filled, loving and caring family and friends, and years of functional nutrition and functional medicine intervention through me and other experts.

Oral, head and neck issues are nothing to mess around with. I wish I could go back in time and do things differently, like ask the questions as to WHY the lymph nodes were enlarged, vs just being OK that they were. That’s one of the major differences between western and functional medicine. Western medicine provides a pill for an ill, never asking the WHY question. The WHY question is the basis of functional medicine. Something is ALWAYS underneath a symptom or blood lab abnormality, and functional medicine looks for and uproots that underlying cause or causes so the body can then work on healing itself. At the time, I didn’t know what I now know.

If you know someone who has ongoing enlarged lymph nodes, please don’t brush it off. Ask the WHY question. You may not get the answer you were hoping for, but the sooner you find out what’s wrong, the greater the opportunity you can catch things earlier than we did.
