To understand the concern, you have to dive into lipid science.

Most seed oils (like canola, soybean, sunflower, and corn oil) are high in polyunsaturated fatty acids (PUFAs). These fats are:
⚠️ Unstable
⚠️ Prone to oxidation (especially when heated or processed)
