Salmon with lemon, a great omega-3 source

4 6oz salmon fillets, 2tbsp olive oil, salt & pepper, 2tsp minced garlic, 1tsp Italian herbs, 1 lemon. Directions: Preheat oven to 400 degrees. Grease a large baking pan and place salmon on it. Season generously with salt and pepper. Stir together olive oil, garlic, herbs, and juice from half a lemon. Pour mixture over the salmon and it all over the fillets. Cut the rest of the lemon into thin slices and place on top of fillets. Bake for 12-15 minutes.

Here's another eye-healthy recipe for you! Remember, good eye health starts with what's on your plate!

Lutein packed spinach salad
1 tbsp butter, ¾ c slivered almonds, 1 lb spinach, 1 c dried cranberries. Dressing: ½ c olive oil, ½ c white sugar, ¼ c cider vinegar, ¼ c white wine vinegar, 2 tbsp toasted sesame seeds, 1 tbsp poppy seeds, 2 tsp minced onion, ¼ tsp paprika. Directions: Melt the butter and cook and stir the almonds in the butter until lightly toasted. Remove from heat and let cool. Make dressing: Whisk together all the dressing ingredients. Combine the spinach, toasted almonds, and cranberries in a large serving bowl. Pour dressing over spinach mixture; toss well.

We always tell you how important it is to have a nutritious diet, so here's an eye-healthy recipe for you to try out this holiday season!
Beta-carotene roasted squash
1 butternut squash, 2 tbsp olive oil, 2 cloves garlic (minced), and salt and ground black pepper to taste. Directions: Preheat the oven to 400 degrees F. First, peel the butternut squash, cut in half lengthwise and remove the seeds, and cut into 1-inch cubes. Then, combine the cubes, olive oil, and garlic in a bowl and mix well. Next, season with salt and pepper and place on a baking sheet. Lastly, roast in the preheated oven until squash is lightly browned and tender when pierced with a fork, roughly 30 minutes.
