Brighten up your meals with this Spring Veggie Stir-Fry! Packed with seasonal produce, it's the perfect dish to welcome the spring. ๐ผ โโโโโโโโโโโโโโโโโโngredients:
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon ginger, grated
1 cup asparagus, trimmed and cut into 2-inch pieces
1 cup snap peas, trimmed
1 red bell pepper, sliced
1 cup carrots, julienned
2 tablespoons soy sauce (or tamari for gluten-free option)
1 tablespoon honey or maple syrup
1 teaspoon sesame oil
Salt and pepper to taste
Cooked rice or noodles, for serving
Sesame seeds and sliced green onions, for garnish
Instructions:
Heat the olive oil in a large pan over medium heat. Add the garlic and ginger, and sautรฉ for about 1 minute until fragrant.
Increase the heat to medium-high and add the asparagus, snap peas, red bell pepper, and carrots to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
In a small bowl, whisk together the soy sauce, honey, and sesame oil. Pour this sauce over the vegetables and toss to coat evenly. Cook for an additional 1-2 minutes.
Season with salt and pepper to taste.
Serve the stir-fry over cooked rice or noodles, garnished with sesame seeds and sliced green onions.
