Simple weeknight meal idea: oven roasted veggies

▫️Endless ingredient combinations (experiment with using different veggies and spices – you’ll get a new flavor each time!)

▫️Tip: Cut up veggies in advance to make the dinner prep process faster

Estimated cooking times for roasting vegetables at 425°F:

🥕 Root vegetables (beets, potatoes, carrots): 30 to 45 minutes
🥔 Winter squash (butternut squash, acorn squash): 20 to 60 minutes
🥦 Crucifers (broccoli, cauliflower, Brussels sprouts): 15 to 25 minutes
🫑 Soft vegetables (zucchini, summer squash, bell peppers): 10 to 20 minutes
🫛 Thin vegetables (asparagus, green beans): 10 to 20 minutes
🧅 Onions: 30 to 45 minutes, depending on how crispy you like them
🍅 Tomatoes: 15 to 20 minutes

7 foods known to improve gut health:

1. Jerusalem artichokes:
High in inulin, a non-digestible prebiotic that helps certain beneficial bacteria to grow. Ease into adding these to your diet, as they may cause discomfort to people with sensitive digestive tracts.

2. Bananas:
Restores the health of the bacterial community and may reduce inflammation. This is one reason bananas are a standard prescription for an upset stomach.

3. Polenta:
This high-fiber corn, the base of polenta, earns credit for fostering a healthy gut. Polenta’s insoluble fiber travels directly to the colon, where it ferments into multiple strands of gut flora.

4. Broccoli and other cruciferous veggies:
Reduce inflammation and reduce the risk of bladder, breast, colon, liver, lung, and stomach cancer.

5. Blueberries:
Studies continue to show blueberries may help strengthen our memory, improve our immune system, and diversify our gut bacteria.

6. Beans:
Feed good gut bugs, which in turn revs up your immune system.

March is National Nutrition Month! 🥑🫐🥝

This is an annual campaign led by the Academy of Nutrition and Dietetics. “The theme for 2024 is “Beyond the Table”, which addresses the farm-to-fork aspect of nutrition, from food production and distribution to navigating grocery stores and farmers markets — and even home food safety and storage practices. It also describes the various ways we eat — not only around a dinner table, but also on the go, in schools and restaurants, at games and events. This theme also includes sustainability, for instance, decreasing food waste from school and work to home and beyond.”

Throughout the course, the facilitator will share 10 tools designed to help participants create a pathway for good health that is sustainable for life. No cost. Participants will also find out if they are actually ready to make changes and if not, how to get ready.

Diabetes Prevention Program:

CDC-approved, evidence-based curriculum with lessons, handouts, and other resources to help you make healthy changes to prevent and/or reduce your risk of diabetes. Each session is facilitated by a trained Health Coach and includes group support. No cost. Anyone who qualifies is eligible to participate. One-year program with 23 classes.
