A classic Middle Eastern mezze staple with a twist - sweetpotatoes add a pop of color, natural sweetness, and a boost of nutrition. Packed with fresh herbs, an assortment of crisp veggies, and topped with a zesty dressing using kitchen staples — it doesn’t get easier to make a fresh, flavorful, and nourishing dish. 🍋
✨Ps. Did you know one medium sweetpotato has just 100 calories, 4g of filling fiber, and is a excellent source of vitamin A? 🍠

Here’s what you need to make it:
* 1 ½ cup cooked and cubed  
* ½ cup cooked bulgur 
* 1 roma tomato, diced
* 2 mini cucumbers, diced
* 3 cups loosely packed parsley leaves, chopped
* 5-6 fresh mint leaves, chopped
* 3 scallions, chopped
* 1/3 cup extra-virgin olive oil
* 2 lemons, juiced
* 2 garlic cloves minced
* ¼ tsp cumin
* 1 tsp salt
* ½ tsp freshly ground black pepper

Instructions
1. In a large mixing bowl, add sweetpotato, bulgur, tomato, cucumber, parsley, mint leaves, and scallions. Toss to combine. 
2. In a small bowl, whisk together olive oil, lemon juice, garlic, cumin, salt, and pepper.
3. Pour dressing over vegetables and toss well. Cover and chill for at least 30 minutes or up to overnight. Serve chilled.

I’ve been baking since I was little and discovered early on that you can replace butter or oil in a recipe up to a half or more with applesauce in muffin, brownies, quick breads and even cookie recipes! 🧁🍰🍪🍫
