Cooling Process - TFER Regulation
1. Separate in smaller containers
2. Use prepackaged ice to chill the food
3. 2 hours to rapidly chill starting at 135F to 70F

All food, even in containers, must be 6 inches off the floor.

* If the floor is dirty, then food is dirty.

41F is the correct temperature. Anything above is a violation.

The QUESTIONS are?

How long do you have to do it needs to be thrown away?
How long till it will get me sick?
Is it stored there all night long?
Can I fix the temperatures and save the food?
