Low Carb Peach Ice Cream - A summertime favorite!

Ingredients:
8 oz light cream cheese, softened
1 cup Splenda
2 eggs
1 Tbls lemon juice
1 tsp vanilla
2 ½ cups light cream
½ cup diced peaches*

Directions:
1. In a large mixing bowl, beat cream cheese and Splenda until smooth.
2. Beat in eggs, lemon juice and vanilla until combined.
3. Stir in cream and peaches.
4. Place in ice cream maker and freeze according to instructions.
5. Churn before serving.

Grilled Basil-Lime Chicken Kabobs - Serve with fresh veggies or a bright salad!

Ingredients:
3 Limes (juice and zest) Divided
1/4 Cup Olive Oil
3 Tbls Dijon Mustard
3 Tbls Worcestershire Sauce
3 Tbls Soy Sauce
6 Green Onions, sliced
4 Cloves Garlic, minced
2 Tbls Fresh Basil, chopped
Salt and Pepper to taste
4 Chicken Breasts, sliced into cutlets

Instructions:
1. Combine the zest and juice of 2 limes, Olive Oil, Mustard, Worcestershire, Soy, 3 onions, 2 garlic cloves salt and pepper and mix well.
2. Cut chicken into even cutlets and place in a gallon sized baggie.
3. Pour marinade over the chicken and marinate for 1 hour.
4. Preheat grill.
5. Place chicken on grill and grill for 7 minutes.
6. Then flip and cook until internal temp reaches 170.
7. Remove from grill and let meat rest.
8. Meanwhile combine juice and zest of one lime with extra virgin olive oil, 3 chopped onions, 2
minced garlic cloves, basil.
9. Plate chicken cutlets and pour sauce over top.

Spaghetti Squash with Cheesy Ranch Chicken - Comfort food goodness but good for you!

Ingredients:
4 small chicken breast halves (3-4 oz ea)
4 slices bacon, cooked crisp & chopped
1 packet Ranch dressing mix
4 oz. light cream cheese
½ cup shredded cheddar
1 large spaghetti squash

Directions:
1. Preheat the oven to 350 degrees.
2. Line baking sheet with foil and spray with cooking spray.
3. Prick skin of spaghetti squash several times and microwave on high for 5-6 minutes.
4. Slice (crossways) squash into 1” rings and scoop away seeds & center pulp.
5. Bake squash for 30-40 minutes or until flesh pulls into strands easily.
6. Place chicken in separate dish and bake for 25-30 minutes or until done.
7. Mix together cream cheese & dressing mix.
8. Remove squash from oven and separate strands from outer shell. Spoon into bowl with cream cheese mixture and toss until coated.
9. Plate squash mixture and top with chicken breast.
10. Garnish with bacon & shredded cheddar. Enjoy!

Pesto Grilled Shrimp - Serve alone as appetizers or in a salad!

Ingredients:
1/2 cup basil, packed
1 small clove garlic
1 tablespoon pine nuts, toasted
2 tablespoons parmigiano-reggiano (parmesan), grated
2 tablespoons olive oil
1 tablespoon lemon juice (~1/2 lemon)
salt and pepper to taste
1 pound large shrimp, peeled and deveined

Directions:
1. Pulse the basil, garlic, pine nuts, parmesan, oil, lemon juice, salt and pepper until smooth.
2. Marinate the shrimp in the pesto for 20 minutes in the fridge.
3. Skewer the shrimp and grill over medium-high heat until cooked, about 2-3 minutes per side.

Tip: Serve alone as appetizers or in a salad

Ingredients:
1 medium zucchini
4-6 cherry tomatoes
1 Tbsp Kalamata or black olives, sliced
½ cup marinated artichoke hearts, quartered or chopped
1 Tbsp feta cheese, crumbled

Dressing:
1 tsp. white wine vinegar
1 tsp. lemon juice
Salt & pepper to taste

Directions
1. Combine sliced or spiralized zucchini, halved tomatoes, sliced olived, & chopped artichoke hearts.
2. Stir together dressing ingredients.
3. Drizzle salad with dressing and toss to coat.
4. Toss in bowl and top with feta cheese.

Turkey Sliders with Spinach & Feta -
Serve as a main entrée or an appetizer – they’re a crowd-pleaser!

Ingredients:
2 lbs ground turkey or ground turkey sausage
2 eggs
2 cloves garlic, minced
10 oz package of fresh baby spinach, chopped
4 oz feta cheese
Salt & pepper to taste

Tzatziki sauce:
6 oz plain Greek yogurt
½ c cucumber, grated
1 tsp olive oil
2 tsp white wine or rice vinegar
1 clove garlic, minced
1 tso dill
Salt to taste

Directions:
1. Mix all ingredients for sliders together in a large bowl.
2. Form 24 small patties on parchment paper or foil.
3. Fry patties over medium to medium-high heat in non-stick skillet that has been sprayed with cooking spray. (These take a little heat to brown)
4. Transfer to cooling rack.
5. Serve with Tzatziki sauce.

Makes 8 servings (3 sliders)

Low Carb Pineapple Whip - A fresh and sunny summer treat!

Ingredients:
1 pkg vanilla protein pudding & shake mix
1 pkg pineapple 15g protein drink mix (or any protein fruit flavor)
¾ cup half & half
¾ cup unsweetened almond milk

Directions:
1. Fill quart sized Ziploc bag with protein mixes, half & half and almond milk – seal tightly.
2. Squeeze/knead to mix.
3. Fill gallon sized Ziploc bag with 4-6 cups of ice and a tablespoon of rock salt.
4. Place smaller bag inside the larger and seal tightly.
5. Wrap a dish towel around the bag and shake for about 5 minutes. Examine mix at that point and continue to shake if the mix is not yet the consistency that you’re looking for.

Makes 4 servings

Bacon & Cheddar Deviled Eggs - It’s the little extra that makes them worth making!

Ingredients:
12 eggs
½ cup mayonnaise
4 slices bacon
2 green onions sliced thin, slice stems for garnish
¼ cup finely shredded Cheddar cheese
1/8 tsp celery salt
1/8 tsp paprika

Directions:
1. Bring eggs in water to a boil and turn off heat. Cover and let stand 10-12 minutes. Remove eggs from water and allow to cool. Eggs may be placed in ice water to cool more quickly. Once cool, remove shells and place in bowl.
2. Cook bacon over medium-high heat until evenly brown. Remove from heat and crumble to small bits.
3. Slice onions, reserve green stems for garnish.
4. Cut eggs in half length-wise and pop yolk out into medium bowl. Using fork, mash egg yolks to eliminate lumps. Stir in mustard, mayo, bacon, onions and cheese. Add seasonings and stir until smooth.
5. Using two small spoons, scoop small amounts into each half of the eggs. Garnish with crumbled bacon and green onion or chives.

Blueberry Cream Cheese Buckle - Good, home-made crumb cake!

Ingredients:
¾ cup soy flour
¾ cup bulk sugar substitute (separated)
2 tsp baking powder
3 large eggs
½ cup soy or almond milk
1 ½ tsp vanilla extract
1/3 cup water
½ cup fresh blueberries
8 ounces light cream cheese
3 Tbls butter
½ cup almond flour
½ tsp cinnamon

Directions:
1. Preheat oven to 375 degrees. Move rack to center position. Spray 8 inch cake or quiche dish with cooking spray.
2. In large bowl, combine soy flour, ½ cup sugar substitute and baking powder. Whisk in 2 eggs, soy milk, vanilla & 1/3 cup water until completely mixed.
3. Fold ¼ cup blueberries into the batter and then pour batter into the pan or dish, spreading evenly.
4. In medium bowl, combine cream cheese and remaining egg, mixing well. Pour over batter and spread evenly. Top with remaining blueberries.
5. In another bowl, combine butter, almond flour, cinnamon and remaining ¼ cup sugar substitute to create the crumb topping. Crumble over top all in the dish.
6. Bake for 35 minutes or until toothpick inserted into the cake comes out clean. Let cool 10 minutes before slicing.

New York Strip Steak with Herbed Butter - Pair it with fresh veggies or a colorful salad! (adjust the portion to control the calories)

Ingredients:
2 New York strip steaks (4-5 oz)
2 Tbls red wine vinegar
2 cloves garlic, minced
1 tsp dried rosemary
1 tsp oregano
Salt & pepper to taste
2 Tbls olive oil
2 Tbls butter
1 Tbls fresh chives
1 clove garlic, minced
¼ tsp fresh ground pepper

Directions:
1. Mix vinegar through olive oil together in large resealable bag. Add steaks and allow to marinate for at least 30 minutes in refrigerator. Allow to come to room temperature prior to grilling.
2. Mix butter, chives, garlic & pepper. Set aside.
3. Grill steaks over medium heat to desired doneness. Allow meat to rest 5-10 minutes before slicing. Top with herbed butter and serve with green veggies or a side salad.

Makes 2 servings

Cucumber Noodle Salad - You’ll want to serve this often – so easy to toss together and it looks like you fussed!

Ingredients:
1 English cucumber
1 large carrot
3 Tbls lime juice
1 tsp honey
2 tsp olive oil
2 green onions, sliced
1 clove garlic, minced
¼ tsp red pepper flakes
1 handful fresh cilantro, chopped
1 Tbls peanuts, chopped small

Directions:
1. Mix lime juice, honey, olive oil, green onions, garlic, red pepper flakes & cilantro together in medium bowl.
2. Spiralize or cut cucumber & carrots. Allow cucumber to sit on paper towel for a few minutes to absorb excess moisture.
3. Add cucumber & carrot to dressing and toss. Top with chopped peanut & serve!

Note: I used a large spiralizer blade for the cucumbers and a small one for the carrots. Both cucumber and carrots could be cut in rounds or julienne strips.
