Crustless Spinach Quiche - a great meatless brunch or dinner option!

Ingredients:
6 eggs
10 oz pkg frozen spinach, thawed & drained
1 medium onion, diced
2 cloves garlic, minced
1 Tbls butter
½ cup green olives, sliced
1 tsp red pepper flakes (adjust to taste)
2 cups shredded cheddar
Salt & Pepper to taste

Directions
1. Preheat oven to 350 degrees. Spray large (9”) quiche dish with cooking spray.
2. Saute onions & garlic in butter until softened. Stir in spinach and cook until heated through. Remove from heat.
3. Add olives and pepper flakes.
4. Whisk eggs and stir into spinach mixture.
5. Stir in cheese and pour into baking dish. Sprinkle a little more cheese on top if desired.
6. Bake for 35-40 minutes or until eggs are set and edges turn slightly brown.
7. Remove and allow to cool before serving.

Makes 6 servings

Fish Tacos in Lettuce Cups - a quick & easy weeknight option!

Ingredients:
1 tsp garlic powder
1 tsp oregano
½ tsp cumin
1 tsp cilantro
½ tsp salt
¼ tsp chipotle or chili powder
1 lb white fish (rockfish or mahi mahi)
1 lime
2 cups shredded cabbage (or use the cole slaw mix ready to go)
¼ cup green onions
2 heads Boston lettuce
Salsa or avocado for garnish – optional

Directions:
Combine dry spices in bowl.
Clean & separate lettuce leaves. Dry by rolling in paper towel. Set aside.
Heat oil in skillet over medium heat.
Coat each piece of fish in spice mixture and add to skillet.
Pan-fry fish about 4-5 minutes on each side or until flaky.
Spread small amounts of cabbage in each lettuce cup.
Break up larger pieces of fish and spoon into lettuce cups.
Top with green onion, salsa or avocado and squeeze lime over each.


Makes 2 servings

She and her husband have worked as directors and motivational speakers for Brigham Young University’s Especially for Youth Program. Serving for 3 and 1/2 years as the president of a philanthropic organization, Jennifer is committed to helping others improve their circumstances. The kids are back to school and probably looking for a snack when they get home! Have something nutritious waiting for them & enjoy one yourself 😊

Ingredients:
2 scoops protein powder (Proti-VLC Smoothie base)
½ cup almond meal
1/4 tsp salt
½ cup almond or peanut butter
1 tsp vanilla
¼ cup mini chocolate chips
1 Tbls almond milk

Directions
Combine dry ingredients in a bowl. Stir to blend.
Add canned almond butter & vanilla. Stir to blend.
Add chocolate chips and almond milk. Stir to blend.
Form into small (walnut-sized) balls by rolling in palms of your hands.
Place on plate or tray and chill for 30 minutes until more firm.
Enjoy!

Quick & Easy Pesto Chicken - dinner in 30 minutes!

4 chicken tenders or 2 chicken breasts - cut in half lengthwise
4 T prepared pesto sauce
2 T shredded mozzarella or parmesan cheese

Spread 2 T pesto in the bottom of a small baking dish. Place the chicken pieces on top and spread with the remaining pesto. Cover with foil and bake at 350 degrees for 25 -30 minutes. Take out of oven and sprinkle with cheese. Return to oven uncovered and allow cheese to melt. Serve with your favorite sauteed veggie or a nice side salad!

Seared Scallops with Chili-Lime Sauce
A quick & easy weeknight dinner! Serve with your favorite green veggie 🥦

Ingredients:
2 Tbls butter
1 lb sea scallops
Salt & pepper to taste
Dressing:
2 Tbsp Thai red chili sauce
2 cloves garlic, minced
Thai basil, sliced in thin strips
1 lime, wedged

Directions:
1. Rinse and drain scallops. Pat dry with a paper towel. Sprinkle with salt & pepper.
2. In heavy skillet, melt butter over high heat. Once it begins to foam, add scallops and allow to brown, about 3-4 minutes. Turn scallops.
3. Add garlic, basil and chili sauce and allow to brown slightly (but do not coat scallops).
4. Remove scallops to a plate when browned on both sides. Spoon sauce over to serve. Garnish with lime wedges and extra basil.
