Almond Chicken Salad - A nutty chicken salad served with lettuce cups or low carb wraps.
Ingredients:
8 oz boneless skinless chicken breasts , cooked (cut into strips)
2 medium celery stalks , sliced
1 tbsp slivered almonds
2 tbsp fat free mayonnaise
1 tsp dried dill w**d
1 pinch salt (optional)
2 piece slice rye bread (optional)
1 pinch black pepper
Directions:
1 Chop chicken and celery. Place in small mixing bowl.
2 Toast almonds in toaster oven or skillet until golden. Add to chicken.
3 Stir in mayonnaise, dill, salt, and pepper.
4 Spoon salad onto two separate plates and serve with low carbohydrate bread or wrap.
Additional Information
To lower the carbohydrates, serve on top of large lettuce leaves.

Bacon & Cheddar Deviled Eggs
It’s the little extra that makes them worth making!
Ingredients:
12 eggs
½ cup mayonnaise
4 slices bacon
2 green onions sliced thin, slice stems for garnish
¼ cup finely shredded Cheddar cheese
1/8 tsp celery salt
1/8 tsp paprika
Directions
1. Bring eggs in water to a boil and turn off heat. Cover and let stand 10-12 minutes. Remove eggs from water and allow to cool. Eggs may be placed in ice water to cool more quickly. Once cool, remove shells and place in bowl.
2. Cook bacon over medium-high heat until evenly brown. Remove from heat and crumble to small bits.
3. Slice onions, reserve green stems for garnish.
4. Cut eggs in half length-wise and pop yolk out into medium bowl. Using fork, mash egg yolks to eliminate lumps. Stir in mustard, mayo, bacon, onions and cheese. Add seasonings and stir until smooth.
5. Using two small spoons, scoop small amounts into each half of the eggs. Garnish with crumbled bacon and green onion or chives.

Roasted Chicken with Olives and Artichokes
Ready In: 75 Minutes
Cook Time: 60 Minutes
Serves 4
INGREDIENTS:
4 chicken breast halves
1 (14 ounce) can Quartered Artichoke Hearts, drained
1 (6 ounce) can Small Pitted Ripe Olives, drained
1 (5.75 ounce) jar Stuffed Green Olives, drained
¼ cup dry white wine or Chicken Broth
¼ cup chopped fresh parsley
1 tablespoon chopped garlic
DIRECTIONS:
Heat large skillet over medium-high heat. Salt and pepper chicken to taste.
Sear chicken until browned (about 5 minutes). Transfer to a glass baking dish.
Combine remaining ingredients and pour over chicken. Bake in a preheated 350°F oven 1 hour or until internal temperature reaches 170°F.

Cheesecake Bars - Something sweet without the guilt!

Ingredients:
Crust:
2 large eggs, beaten
1 cup almond flour
1/3 cup bulk sugar substitute
1 tsp baking powder

Filling:
16 oz cream cheese, softened
½ cup bulk sugar substitute
1 Tbls vanilla extract
3 large eggs

Directions:
1. Preheat oven to 350 degrees and spray 8x8 baking dish with cooking spray.
2. Combine all crust ingredients in large bowl. Pour into baking dish and spread evenly. Bake for 15 minutes or until lightly browned. Let cool for 5 minutes.
3. Beat first 3 filling ingredients until combined. Add eggs and continue mixing on medium until mixed and smooth.
4. Pour filling over crust and bake for 30 minutes or until center is set.
5. Cool for 30 minutes and then refrigerate for 2 hours before cutting into 2” squares.

Broccoli Stuffed Sole - Light, but satisfying!

Ingredients
1 lb fresh broccoli florets
1 ½ lb sole filets, 6 pcs
Cooking spray
1 tsp black pepper
Pinch of salt
Pinch of fresh ground pepper
½ cup water

Wine sauce:
2 Tbls butter
2 Tbls shallots, chopped
¾ cup dry white wine

Directions:
1. Preheat the oven to 425 degrees.
2. Remove tough stalk from broccoli and break into florets. In saucepan, steam broccoli over water until crisp-tender.
3. Rinse sole under cool water, pat dry with paper towel and lightly coat one side of filet with cooking spray. Place several florets on narrow end of sole and wrap fish around broccoli. Fasten with wooden pick.
4. Place fish bundles in baking dish, seam side down. Cover with foil and bake 12-16 minutes or until opaque, but still moist. Remove from oven and season with salt & pepper. Spoon wine sauce over fish to serve.

Wine Sauce:
In medium skillet, over medium heat, combine butter and shallots. Cook until shallots are golden brown, about 3 minutes. Increase temperature to high, add wine and bring to boil. Stir until mixture is reduced ¼ cup (about 6 minutes).
