🎃 60-Second Pumpkin Mug Cake 🎃

Cozy, easy, and low-carb! Perfect for when you want fall flavors without falling off track.

You’ll need:

2 tbsp (16g) finely ground coconut flour

2 tbsp (16g) finely ground almond flour

2 tbsp (28g) erythritol (or liquid sweetener)

1 tbsp (15ml) melted butter

1 tbsp (15ml) unsweetened almond milk

½ tsp (3g) gluten-free baking powder

1 egg

1 pinch salt

2 tbsp (28g) pumpkin puree

½ tsp (3g) pumpkin spice

½ tsp (3ml) vanilla extract

How to make it:
Whisk everything until smooth, pour into a greased microwave-safe mug (at least 2x the batter size), microwave 45–60 seconds, and top with real whipped cream if you’d like. 🧁

157 calories • 10.8g fat • 8.3g carbs • 4.5g fiber • 8.9g protein

A lighter, veggie-packed twist on classic stuffing that still gives you all the cozy holiday vibes.

Cauliflower Stuffing 🥦✨
✅ Serves 10
✅ Just 95 calories per serving
✅ 7g fat • 7g carbs • 3g fiber • 2g protein
What’s inside:
🌱 1 large head cauliflower (chopped)
🧅 Onion, celery & garlic
🫒 Olive oil + poultry seasoning, thyme, sage, salt & pepper
🌿 Fresh parsley
🥜 Chopped pecans for crunch

How to make it:
Roast chopped cauliflower, onion, celery & garlic with olive oil and seasonings at 450°F for ~15 minutes. Add parsley + pecans, toss, and roast another 10–15 minutes until the cauliflower is browned, onions are caramelized, and pecans are lightly toasted.

Perfect as a holiday side or weeknight comfort food without the carb crash. 🥰

Low-Carb Mint Cheesecake Brownies The perfect mix of rich chocolate + cool mint, and you can still enjoy them while you're on a low-carb diet!

Ingredients

Brownie Base:
• ¼ cup artificial granulated sweetener
• ¼ cup unsalted butter
• ¾ cup almond flour
• 2 eggs
• 2 tbsp unsweetened cocoa powder
• 2 tbsp water

Cheesecake Swirl:
• 8 oz cream cheese
• ¼ cup artificial granulated sweetener
• 1 egg
• ½ tsp peppermint extract (or to taste)
• Green food dye (optional)

Directions:
1️⃣ Preheat oven to 350°F and line an 8×8” pan with parchment.
2️⃣ Cream together butter + sweetener.
3️⃣ Add remaining brownie ingredients and mix well.
4️⃣ Pour into pan.
5️⃣ In a separate bowl, mix cheesecake ingredients until smooth. Add dollops on top and swirl with a knife.
6️⃣ Bake 30 minutes or until a toothpick comes out clean.
7️⃣ Cool, slice into 16 squares, & enjoy! 🍫🌿

🍕Mini Zucchini Pizza Bites! A low-carb option from our free Holiday Menu!

Ingredients:
🥒 2 zucchini, thin rounds
🍅 A handful grape tomatoes, sliced
🍕 1/4 cup mini pepperoni, sliced
🧂 Kosher salt & black pepper, to taste
🧀 1/2 cup shredded mozzarella
🌿 1 Tbsp Italian seasoning
🌱 Fresh chopped parsley (optional)

Directions:
1️⃣ Preheat oven to broil. Heat a little olive oil in a skillet over medium-high. Add zucchini rounds and sear 1–2 min per side until lightly golden; season with salt & pepper.
2️⃣ Transfer to a foil/parchment-lined sheet. Top each round with mozzarella, mini pepperoni, and tomato. Sprinkle Italian seasoning.
3️⃣ Broil 1–2 min until melty. Garnish with parsley. Serve hot & enjoy!
