Basic Miso Soup - Here’s another delicious recipe from the "Ancient Wisdom, Modern Kitchen" cook book. Miso soup is based on miso paste, a form of fermented soy containing healthy probiotics. This is a great soup for anyone feeling under the weather, has an upset stomach, or is recovering from an illness.

Ingredients:
1 tbsp dried precut wakame seaweed
2 and 1/2 cups dash soup stock or water
1/2 block (about 7 ounces) soft or firm tofu, cut into 1/2-inch cubes
3-4 tbsp white miso paste, or 1 and 1/2-2 tbsp red miso paste, or to taste
1 medium-sided green onion, chopped into 1/4-inch pieces, roots and tough tips discarded.

Directions:
Soak the wakame in water for 2-3 minutes. It will expand a lot, so don’t be misled by its compact size in its dried form.
Place the dash soup stock in a pot and bring to a boil.
add the wakame and tofu to the pot, then simmer over low heat, covered with the lid slightly ajar, for about 5 minutes. Turn off the heat.
Remove 4 tbsp of the stock from the pot and, in a bowl, mix it with the miso paste, making sure that all the lumps are stirred out. Gradually pour the miso mixture back into the pot and stir.
garnish with the green onion.

Note: there are endless variations to this recipe. One could add beansprouts, daikon, carrots, eggs, or anything else they fancied.

Lastly, I would highly recommend looking into this cookbook. The authors not only include a number of great recipes, they also break down the recipes' connections to traditional Chinese medicine.

As we are all coming out of winter, I wanted to share a great recipe from the cookbook "Ancient Wisdom, Modern Kitchen" by Yuan Wang, Warren Sheir, and Mika Ono. This traditional Chinese recipe is especially good for fighting off a cold or cough. Also, it's delicious.

Grounding Ginger and Green Onion Congee
Ingredients:
1(1-inch) piece of fresh ginger, peeled and grated or minced
1/4 cup of sticky rice (also "sweet rice" or "glutinous rice")
2 and 1/2 to 3 cups of water
3 green onions, sliced into small pieces (less than 1/4 inch)
Optional additions: rice vinegar, soy sauce, salt, sesame seed oil, or honey.

Directions:
1. Combine the ginger, sticky rice, and water in a medium-size pot, bring to a boil, then lower the heat to low and simmer, covered with the lid slightly ajar, for 30 to 40 minutes, until the congee is the desired consistency. Add a little extra water if the congee is drying out, threatening to stick to the bottom of the pot, or becoming too thick for your taste.
2. Turn off the heat and add the green onion to the congee.
3. Season with the condiment(s) of your choice and serve warm.
