💪🥦 Protein Power Stir-Fry because healthy can also be seriously tasty.
Loaded with chicken, fresh veggies, and edamame for an extra protein punch, this quick 15-minute dish is perfect for caregivers who want to fuel their patients and themselves.
You’ll need:
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 1 bell pepper, sliced
- 1 cup cooked chicken breast, diced
- 1/2 cup shelled edamame or chickpeas
- 2 tbsp olive oil
- 2 tbsp low-sodium soy sauce
- 1 tsp minced garlic
- 1 tsp minced ginger
Steps:
1️⃣ Heat olive oil in a pan over medium heat.
2️⃣ Add garlic & ginger, sauté 30 sec.
3️⃣ Toss in broccoli, carrots & bell pepper — cook 4–5 mins.
4️⃣ Add chicken, edamame & soy sauce, stir until heated through.
5️⃣ Serve over brown rice or whole-grain noodles.
