let’s make chickpea sweet potatoes with a lemon garlic herb & fresh tomatoes AKA the most savory and packable lunch in the office fridge this week!!!
4 medium sweet potatoes cut in half, rub in olive oil, sprinkle with salt and pepper
2 cans of chickpeas, drained, tossed in 1 tbsp olive oil, 1 tsp of cinnamon, paprika, cumin, and coriander
both baked at 400 for approx 35 minutes
sauce: half a cup of plain hummus, 1 tsp dried dill, 1 tbsp garlic, juice from half of a lemon (or more to taste), splash of water to thin if needed
tomatoes: 1 cup of halved cherry tomatoes, juice from half a lemon, sprinkle of parsley, heavy drizzle of sweet chili sauce
layer sauce, chickpeas, and tomatoes on top of sweet potatoes and enjoy!!!!
