let’s make chickpea sweet potatoes with a lemon garlic herb & fresh tomatoes AKA the most savory and packable lunch in the office fridge this week!!!

4 medium sweet potatoes cut in half, rub in olive oil, sprinkle with salt and pepper

2 cans of chickpeas, drained, tossed in 1 tbsp olive oil, 1 tsp of cinnamon, paprika, cumin, and coriander

both baked at 400 for approx 35 minutes

sauce: half a cup of plain hummus, 1 tsp dried dill, 1 tbsp garlic, juice from half of a lemon (or more to taste), splash of water to thin if needed

tomatoes: 1 cup of halved cherry tomatoes, juice from half a lemon, sprinkle of parsley, heavy drizzle of sweet chili sauce

layer sauce, chickpeas, and tomatoes on top of sweet potatoes and enjoy!!!!

forgot to take a pic of the ricotta hushpuppies bc I was 2 secs away from hangry but OMG 10/10 SO GOOD

ginger lemongrass grilled tofu {coconut black rice, baby bok chow, swiss chard, roasted ginger vinaigrette} 8/10 wish the tofu was a bit more crispy

pistachio olive oil caked {strawberry basil compote, whipped honey mascarpone, olive oil drizzle, pistachio brittle, micro basil} 10/10 UNREAL how was this gluten free?!

I've been drinking this juice every morning for about 3 weeks now and let me tell you, my gut is thriving!!! and the best part is- you can really make it your own! i probably used too many lemons for the average person but I like lemon lol

Happy Good Friday to all who celebrate!!! This is one of those smoothie recipes you just have to trust me on!!!

2 carrots (I steamed and let cool first but you can also use raw)
half an avocado
1-2 dates
3/4 cup almond milk
1/4 cup vanilla yogurt
sprinkIe of cinnamon

i am a few days late but HAPPY SPRING FRIENDS!!!! if your taste buds are anything like mine, go ahead and add this smoothie to your favorites list!!! it tastes like dessert but still light and, of course, all natural!!

1 cup fresh pineapple chunks
1/2 cup frozen banana slices
1/2 cup yogurt (I used plain almond)
juice + zest from ½ of a lemon
1/4 cup oats
1/2 cup almond milk
