Lemon Blueberry Muffins 🍋💙

Light, soft, and full of springtime flavour. Blueberries are rich in antioxidants that support brain health, and the familiar process of measuring, mixing, and baking makes this a calming and meaningful activity for memory care residents. ✨

Ingredients
🍋 1 1/2 cups all-purpose flour
🍋 3/4 cup sugar
🍋 1/2 tsp salt
🍋 2 tsp baking powder
🍋 1 cup fresh or frozen blueberries
🍋 1 egg
🍋 1/3 cup melted butter or neutral oil
🍋 1/3 cup milk
🍋 1 tsp vanilla extract
🍋 Zest of 1 lemon

Instructions
✅ Preheat oven to 375°F (190°C) and line a muffin tin
✅ Whisk together flour, sugar, salt, and baking powder

The highlight of the day? A special visit from the Easter Bunny! From bunny ears to big hugs and lots of laughter, the joy in these moments truly says it all. 🐣🐇
