It’s that time of year! 🎃

Pumpkin bread is one of my favorites and this recipe from does not disappoint!

It’s so easy, really like 5 min and it’s in the oven, and delicious— and the best part is that you can customize it! Want it gluten free, no oil, no sugar, add nuts? You got it!

I used applesauce instead of oil and used 1/2 c of sugar to make it more of a savory bread. I also added the pepitas on top 🙌🏼

Delicious wild blueberry pancakes 🥞

🫐 blueberries are full of antioxidants, often called “the king of antioxidant foods”

Antioxidants protect your body from free radicals which can damage your cells, lead to premature aging, as well as some diseases and cancers.

Blueberries are also a great source of fiber, vitamin C, vitamin K + manganese

Bonus!
Wild blueberries (smaller low bush blueberries) are higher in antioxidants!
Also, frozen blueberries have shown to have higher level of antioxidants since they are frozen at the peak ripeness.

So… go get your blueberry on! They made wonderful additions to baked goods, smoothies, topping for oatmeal + smoothie bowls!

Delicious Quinoa Salad 🥗

I make it a bit different every time I make it depending on the fresh produce I have on hand.

I also season it depending on what I’m feeling!
Today was more of a Mediterranean style flavor with vegan feta and zaatar (thyme + sesame) seasoning.

This delicious and nutritious salad can be made for meal prep, as a side dish or as a complete meal. It stores great in the fridge.

I cook quinoa for about 25-30 min, covered over medium/low heat after bringing the quinoa and 2x water to a boil.

Did you know that 95% of serotonin is produced in your gut?! So, you could say that your mood correlates directly with how “happy” your gut bacteria are 😃

🧠 There is a fascinating relationship between the gut microbiome and the brain— each influencing the other.

🦠 This emphasizes the importance of feeding and nourishing a healthy and beneficial gut microbiome. Our gut bacteria has influence over neural development, brain chemistry, and behavioral aspects such as emotional behavior, pain perception and how the body’s stress system responds.

One of the best things you can do for your gut microbiome? Eat more plants!

🌾 Did you know that only 5% of people in the US actually reach the “recommended” amount of daily fiber? And even the recommended amount is LOW! Fiber (only found in plants), among with many other beneficial nutrients, feeds our gut. Short chain fatty acids produced in the large intestine can only be made through the consumption of plant foods.

Try to incorporate as much plant foods into your diet as possible… your gut, and your brain will thank you!

My easy go-to’s:
•Daily smoothie - delicious and easy way to load up on fiber (spinach, frozen fruit)
•Apple or Banana for on-the-go snacks
•Adding greens to meals - sprouts + arugula are amazing with pretty much everything

Smoothies are a great way to load up on greens and fruit— getting all the nutrients and fiber (as opposed to juicing which removes the precious fiber).

Smoothies are especially great for those who don’t want to eat a whole plate of greens! My [almost] 6 year old loooooves his smoothies and I love knowing that he’s getting a serving of greens and fruit!

My go to smoothie adds:
Fresh spinach
Spirulina powder
Moringa powder
Ground flax seeds
H**p seeps
Alma berry powder
+
Whatever frozen fruit we have
+
Milk (we use dairy free)

And...
If you’re in the market for an amazing blender without the hefty cost of a vitamix or blendtec, I highly recommend the Ninja! Ours can make smoothies, smoothie bowls, food process, make doughs, nut butters and sauces!

Every part of the dandelion can be eaten and has amazing benefits.

They have an abundance source of nutrients that our bodies need.

Dandelions are high in vitamin K, vitamin C, Potassium, Iron and vitamin B6.

Dandelions also offer folate, magnesium and copper.

Dandelions are immune system boosters.

Dandelions can help balance our blood sugar levels, relieve heartburn, and even soothe common digestive issues.

Dandelions can be eaten raw, and they won't lose any of their vitamins or nutrients even when you cook them!

If you do decide to enjoy them, be sure to leave some dandelions for our bees 🐝 and be conscious where you’re taking them from— some areas have been sprayed with pesticides and treatment chemicals (lawn fertilizers)
