Back again because I can’t stop making this Apple Cranberry Chicken Salad 🤩 30g protein, only 260 calories… and ready in 10 mins!🍎🍂 The ultimate cozy healthy fall lunch hack🥰 Recipe 👇

Ingredients
* 1 cooked chicken breast
* 1/4 red onion diced
* 1 green onion diced
* 1 small apple diced
* 2 tbsp chopped pecans
* 2 tbsp reduced-sugar dried cranberries (optional)
* 1/4 cup plain Greek yogurt
* 1/2 tbsp Dijon mustard
* 1 tsp lemon juice
* Salt & pepper to taste
Instructions
* In a large mixing bowl, shred the chicken.

* Add diced onion, green onion, apple, pecans, and cranberries.

* Stir in Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.

* Mix until creamy and well combined.

* Store in the fridge in an airtight container for up to 5 days. (I eat things for up to 7 days, but maybe that’s just me) 😅

Easy Sheet Pan Buffalo Chicken (High Protein, Gluten-Free + Healthy Dinner!)

Ingredients
SHEET PAN
* 1 lb baby white potatoes diced
* 1 red onion sliced
* 2 large chicken breasts diced
* 1/2 tbsp olive oil
* 1/2 tbsp paprika
* 2 tsp garlic powder
* 2 tsp onion powder
* 1/2 tsp salt
* 1/4 cup buffalo sauce
* Diced green onions for garnish

BLUE CHEESE SAUCE (the best)
* 1/2 cup Greek yogurt
* 2 tbsp white vinegar
* 2 oz blue cheese crumbled
* Salt + pepper to taste

Instructions

* Preheat oven to 425°F. Dice potatoes, onion, and chicken.

* Add to a sheet pan and toss with olive oil and spices. Spread evenly.

* Bake for 25 minutes, tossing halfway, until chicken is cooked through.

* Mix yogurt, vinegar, blue cheese, salt, and pepper for the sauce.

* Toss chicken with buffalo sauce. Drizzle blue cheese sauce on top and garnish with green onions.

Right around 400 Cals per serving. Add cauliflower rice or veggies for more volume 🥰

We’re here to crush that argument once and for all. Being a woman who lifts heavy weights won’t make you bulky, manly, or look like a she-Hulk.

You’d have to really bulk up your diet to bulk up your body.

You don’t expect to lose weight just from working out—you know that a clean and healthy diet is part of the equation too. Well, same goes for getting bigger.

You won’t wake up with insta-muscles.
If you do a few bicep curls and eat some spinach, you’re not going to wake up looking like Popeye. It takes weeks/months of consistent effort to see that toning.

Roasted Chicken Sausage & Veggie Skillet 🥦🥒
A hearty, flavorful, and nutrient-packed one-pan meal!

📝 Ingredients:

2 chicken sausages, sliced
1 medium sweet potato, sliced into half-moons
1 zucchini, sliced into half-moons
1 cup broccoli florets
½ small onion, sliced
2 tbsp olive oil
1 tbsp soy sauce or balsamic glaze
½ tsp garlic powder
½ tsp smoked paprika
½ tsp salt
½ tsp black pepper
1 tsp sesame seeds (optional)
🍽️ Step by Step:

1️⃣ Roast the Sweet Potatoes:

Heat a pan over medium heat and add 1 tbsp olive oil.
Add sweet potatoes and cook for 8-10 minutes until golden and tender. Remove and set aside.

2️⃣ Cook the Chicken Sausage:

In the same pan, add sliced chicken sausage and cook until browned, about 4-5 minutes. Remove and set aside.

3️⃣ Sauté the Vegetables:

Add another tbsp of olive oil to the pan.
Toss in broccoli, zucchini, and onions. Cook for 5-7 minutes until slightly caramelized but still crisp.

4️⃣ Combine & Flavor:

Return the sweet potatoes and chicken sausage to the pan.
Add soy sauce (or balsamic glaze), garlic powder, smoked paprika, salt, and black pepper. Stir well.

5️⃣ Serve & Enjoy:

Sprinkle with sesame seeds if desired and serve warm!
⏱ Prep Time: 10 minutes | Cook Time: 20 minutes | Total Time: 30 minutes

I started having body image issues in Kindergarten. I had to wear a leotard in a Christmas show and I was crying knowing that I was bigger than the other girls. In 4th grade, I started to lean out a little more as I got taller. My parents enrolled me in dance class and I was confident enough to be in the talent show with a friend that year. A few years later, I wanted to dance on pointe ballet shoes, but I was educated that I needed to lose a little weight first before doing that, for safety reasons. That was another reminder that I was bigger than a lot of girls my age, and I hated that, but I lost the weight to be able to participate. Throughout middle school and high school, I exercised a ton, which is how I was able to stay at a healthy weight although I mostly ate whatever I wanted. I was in dance class at least 8hrs per week and was on the dance team in high school. My weight was always on the highest end of the normal BMI chart though, which bugged me. I was diagnosed with rheumatoid arthritis at age 16, an autoimmune disease. I was told that I shouldn’t be exercising as much for my joints and was put on many different medications. It was very painful and I had trouble sleeping.

Once high school was over, I put even more weight on. After all, I wasn’t eating at home as much anymore and there was a lot of drinking (shh) and fast-food stops. I got back down to a decent weight for my wedding (at 23 years old – baby I know), but I remember being so disappointed with myself that I hadn’t lost more and looked better for the pictures. A couple of years went by and I remember jumping on the scale after a weekend trip with my husband and I had gone up almost 15lbs! No wonder I felt so awful! Breweries and nachos had become our thing. I quickly got on it and got back to my wedding weight again by “calorie counting”.

Fast forward to my first pregnancy at age 27. I gained 50lbs and it took me a LONG time to get it off. People kept saying it would come off easy, nope, it was hard work. When I got pregnant with my daughter at age 30, I gained 50lbs AGAIN. I’d start out “good” and then just go crazy the last few months with my binge eating. After I had her, I got it off quicker and I even weighed in the 130’s for the first time in my adult life! I had FINALLY figured out how to maintain and did so for 2 whole years, until, we decided to get pregnant again. Except, I didn’t know that I was going to have two miscarriages first. The hormones and stress of that had me gaining some weight again. After I was blessed to have my last baby, I was determined and excited to get healthy and fit again like I was. I created my Instagram account to hold myself accountable. I turned 35yrs old this year and hit 135lbs which was my goal. No calorie restrictions, no excessive exercising, and being OKAY when the scale goes up and down a little bit. I focus now on my measurements and how my clothes fit. I’m fueling my body with foods that are good for me and I’m not overworking anymore. The most important thing is that I feel in control.

I am so incredibly passionate about helping people feel good about themselves because for so long I DIDN’T!! I know that insecure, unhappy feeling. I want to use what I’ve learned on my own journey and in my health coach training to support others in getting where they want to be! Above all else – accountability is KEY.
