May is Celiac Disease Awareness Month 💚

Celiac disease is more than just “avoiding gluten.” It’s an autoimmune condition where the body attacks its own small intestine in response to gluten exposure.

Here are a few key things to know:
👉 It’s an autoimmune disease, not a preference or trend
👉 The only current treatment is a strict, lifelong gluten-free diet
👉 About 1% of the population is estimated to have Celiac Disease (and many are still misdiagnosed or undiagnosed)

Awareness matters, because earlier diagnosis, proper education, and support can make a huge difference in long-term health and quality of life.

I’ll be sharing a new blog post later this week that breaks this down even further, including what to look for, how it’s diagnosed, and what living gluten-free actually looks like. Stay tuned 👀

Gluten-free Italian food just hits different 🇮🇹✨ (though I prefer to eat it in Italy, hopefully I can get back soon 🙏🏻)

At Mandola’s, it’s the kind of experience that feels familiar in the best way, warm, comforting, and full of those flavors you might have thought you’d have to give up.

A plate of gluten-free pasta with rich sauce, the smell of fresh herbs, and then finishing it off with something sweet from the gelateria… it instantly took me back to my time in Italy. 🍨

Those moments, where food feels both safe *and* special, are the ones that stick with you.

I recently updated my blog post about Mandola’s and shared more about my experience and what to expect if you’re dining there gluten-free. I also learned they've expanded outside of Texas, which is exciting news! 🎊

Trying something new this month 👩‍🍳✨

One of my goals this year is to make 1 new recipe every month and actually share it here. Because let’s be honest… food fatigue is real, especially when you’re gluten-free and cycling through the same “safe” meals 🫠

April’s experiment: air fryer tofu 🙌
I wanted to explore a non-meat protein option and see if it could actually hold up for meal prep… and it did!

✔️ Paired it with rice + yum yum sauce + edamame
✔️ Held up well for leftovers
✔️ Super simple once I got the hang of it

Not gonna lie, there were a few hiccups (aka tofu sticking to the air fryer pan 😅), but overall this is one I’d definitely make again.

This is your reminder that trying new foods doesn’t have to be perfect, it just has to be something different.

A 100% gluten-free cafe? Say less 🥯✨

While I was in Chicago for my brother’s wedding, I made sure to carve out some time to visit Wheat's End and it was absolutely worth it.

Dedicated gluten-free spots can be hard to come by, so being able to walk into a space and not worry about cross-contact is something I never take for granted.

I grabbed some bagels to bring home (of course), enjoyed a scone while I was there, and picked up cookies for my nieces… which they devoured immediately 💚

In my newest blog post, I’m sharing more about my experience and why I highly recommend stopping by if you’re in Chicago.

Packing gluten-free meals is already a part of everyday life for many people with Celiac Disease.

With Earth Day as a reminder, it can also be an opportunity to look at how we’re packing those meals and where small, more sustainable swaps might fit in 🌎

This doesn’t have to be all or nothing.

Maybe it looks like:
🫙 Using a reusable container instead of a disposable bag
☕️ Bringing your own water bottle or coffee cup
🍴 Keeping a set of utensils in your bag

Simple changes, done consistently, can make a meaningful difference over time.

Living gluten-free already takes planning. This is just one way to build on that in a way that works for you 💚

Save this for later or share with someone who packs meals on the go ♻️

All in a way that fits into your schedule and meets you where you are.

If you’re looking to build confidence without the pressure of ongoing appointments, this can be a really helpful first step.

One of my favorite gluten-free finds in Naples… and one I keep coming back to 🍕

Every time I visit my family in Florida, we try to make a stop at Molto Trattoria, and it never disappoints.

I’ve tried a lot of gluten-free pizza over the years, and theirs is truly one of the best. The crust, the flavor, the experience… it honestly takes me right back to my trips to Italy. 🇮🇹

It’s also one of those places where I feel like I can enjoy the meal and the atmosphere, which makes such a difference when living with Celiac Disease.

In my newest blog post, I’m sharing more about my experience dining here, what to expect, and why I recommend it if you’re in the Naples area. 🌊

I had one of those “wait… did I check this?” moments 😅

I grabbed a product I’ve bought before, didn’t look too closely at the packaging, and halfway through eating it I had that sudden realization… this brand makes both gluten-free and gluten-containing versions.

Cue the panic 😱

If you’ve ever had a moment like this, you are absolutely not alone.

Living with Celiac Disease means constantly making decisions around food, and even when you’re careful, mistakes can still happen. Yes, even if you’ve been doing this for years.

The goal isn’t perfection. It’s learning, adjusting, and moving forward.

If this has happened to you, give yourself some grace 💚

You’re doing the best you can with a lot to manage.
