~Fresh.~ Paloma oil is extra virgin. It has less than 0.8% acidity – olives are pressed within 24 hours of being picked. It is also “cold pressed” at low temperatures (below 30°C/86°F). High temperatures extract more oil but destroy the flavor, freshness, and health benefits.

~Local.~ Paloma uses a blend of Texas and California olives and is processed in Dripping Springs, Texas, in partnership with Texas Hill Country Olive Oil Company, 25 miles from our Austin office.

~Trust.~ 69% of the extra virgin olive oil sold in the United States is adulterated or fraudulently labeled. We offer our product with 100% honesty and from the heart – from our family to yours.
