Check out my cabbage salad batch cooking! I’m really excited about this high-protein, fava-bean tofu I recently discovered too.

All I did was finely chop up a head of purple cabbage, grate 2 carrots, and chop up a “hand” of fresh ginger. I then added about 1/2 cup of black currants & 1/3 cup of h**p hearts (for extra crunch & nutrition) and mixed it all up w a generous amount of toasted sesame seed oil and apple-cider vinegar. Also a dash of salt. The key is to really mix it well so the ginger flavor gets dispersed.

I then sautéed the fava-bean tofu in slices in sesame oil and tamari, chopped it up & voila! Now we have nutritious lunches ready-to-go for the next couple of days 😋

Afternoons can be when we hit a slump & when sweet or carb cravings act up! This is one of my easiest go-go’s which contains a little chocolate for an energy boost, but balanced with healthy fats & protein with nuts & seeds so blood sugar doesn’t spike. A small cute bowl helps with portion size & makes it feel more like a treat!

Let’s not let gratitude make us passive, but instead let it fuel us to do the things that we care the most about.

Doing nothing = restoring balance

Animals are designed to spend a whole lot a time doing nothing. We are also animals, yet that idea is so inconceivable to us. No wonder so many of us have taxed adrenals & imbalanced thyroid! Sometimes the best medicine is to soak up those (however small) moments of slowing down & imagining the busy-ness settling down down down dooownnn…blanketed in a snowy white blanket of comfort.

Some of the best sources of PREbiotics: raw jicama, dandelion greens, and asparagus. People are always talking about probiotics, (which can be game-changers when it comes to the diversity of bacteria in your gut and can affect everything from healthy digestion & elimination, to emotional stability to weight loss) but you may not be reaping their full benefits if:

-you aren’t also getting prebiotics which help feed the probiotics to keep them alive
