When you are directed to manage your challenges with Celiac by transitioning to a gluten free lifestyle, are you ready to make changes to feel better?
These guidelines support a transition ~
1. Learn what foods contain Gluten: Wheat, wheat starch, rye, barley and Brewer's yeast
and malted vinegar.
2. Remove any foods in your pantry that contain Gluten
3. Make a list of foods that you are looking to replace ~crackers, flat breads, flours, pasta. research name brands that are Gluten free
4. While looking for Gluten free items, watch for this logo on the package.
This logo means that the manufacturer successfully completed an 80 step science based process. This testing includes
1. Individual ingredient testing that’s at or below 10 ppm of gluten, which is a stricter threshold than the FDA (20 ppm)
2. Manufacturer team training on gluten-free manufacturing best practices.
3. Annual on site audits by GFCO auditors.
4. Documented compliance of certification criteria.
5. Ongoing testing and test results must be to GFCO on a regular basis.
6. Providing GFCO with updated ingredient lists when substitutions are made (at which time the certification status is re-evaluated.)
While this creates more of a manufacturing cost, it is also a promise to represent a growing demand of the need for safety in the medically necessary gluten free community.
