Healthy Recipe of The Month: Crockpot Creamy Cashew Chicken

A cozy, healthy Indian-inspired dish from Half Baked Harvest — perfect for a cold night.

Ingredients:
1 lb boneless, skinless chicken breasts or tenders, cut into bite-size pieces
2 small potatoes, peeled and cubed
1 red bell pepper, sliced
½ cup roasted cashews
½ sweet onion
2 cloves garlic
1-inch k**b fresh ginger, peeled
2 tbsp Thai red curry paste
2 tsp chili powder
1 tsp cumin
½ tsp cinnamon
¼ tsp cayenne
1½ tsp kosher salt (more to taste)
1 tbsp lemon juice
2 cups Almond Breeze Almondmilk Cashewmilk (Unsweetened Original)
Handful fresh cilantro, chopped (plus extra for serving)
Steamed rice + naan for serving

Instructions:
Add chicken, potatoes, and bell pepper to your crockpot.

In a blender, combine cashews, onion, garlic, ginger, curry paste, chili powder, cumin, cinnamon, cayenne, salt, and lemon juice. Blend until completely smooth, adding ½ cup cashew milk if needed.

Pour the mixture over the chicken and add remaining cashew milk.

Cook on low for 4–5 hours or high for 3–4 hours.

Adjust thickness as needed: add more milk if too thick, or cook uncovered for 20–30 minutes if too thin.

Stir in cilantro before serving and enjoy with rice, cilantro, basil, and naan.
