Don't let the holidays get in the way of your goals..

Here’s a healthy dessert recipe that’s perfect for Thanksgiving:

Pumpkin Chia Seed Pudding

Ingredients:
- 1 cup almond milk (or any milk of your choice)
- 1/2 cup canned pumpkin
- 1/4 cup chia seeds
- 2 tablespoons maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice (or cinnamon)

Instructions:
1. In a bowl, whisk together almond milk, pumpkin, maple syrup, vanilla extract, and pumpkin pie spice until well combined.
2. Stir in chia seeds, mixing well to avoid clumping.
3. Cover and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
4. Before serving, stir the pudding again and adjust sweetness if needed.
5. Serve in individual cups and top with crushed walnuts or a dollop of Greek yogurt if desired.

Need a delicious Thanksgiving Meal that won't ruin your progress? Check out this recipe out.

Herb-Roasted Turkey Breast with Quinoa Stuffing

Ingredients:
1 boneless turkey breast (2-3 pounds)
2 tablespoons olive oil
1 tablespoon garlic (minced)
Salt and pepper

Quinoa Stuffing:
1 cup quinoa
2 cups vegetable broth
1/2 cup diced onion
1/2 cup dried cranberries
1/4 cup chopped walnuts

Instructions:
1. Preheat oven to 375°F (190°C). Rub turkey with olive oil, garlic, salt, and pepper. Roast for about 1.5 hours.
2. Cook quinoa in vegetable broth according to package instructions. Mix in onion, cranberries, and walnuts.
3. Serve turkey slices with quinoa stuffing

Packed with protein and seasonal goodness, this sweet potato and quinoa salad is the perfect balance of flavor and fuel. 🥗🍠

🍠 Sweet Potato and Quinoa Salad 🍠

Ingredients:
• 2 sweet potatoes (cubed)
• 1 cup quinoa
• 2 cups spinach
• ¼ cup feta cheese
• 2 tbsp olive oil
• 1 tbsp balsamic vinegar
Instructions:
1. Roast sweet potatoes at 400°F for 20 minutes.
2. Cook quinoa according to package instructions.
3. Toss roasted sweet potatoes, quinoa, spinach, and feta.
4. Drizzle with olive oil and balsamic vinegar.
