Pumpkin Pie Recipe
Ingredients:
2 eggs
2 cups pumpkin, cooked and pureed
1/2 cup honey
1/4 cup butter, softened
1/2 cup raw milk
1/2 tsp. sea salt
1 tsp. vanilla
2 tbsp. sprouted spelt flour or whole spelt flour
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
Dash of cloves or allspice
(if desired)
9” unbaked pie shell

1 3/4 cups sprouted spelt flour or whole spelt flour
1 tsp. sea salt
10 Tbsp. cold butter
3-5 Tbsp. cold water
Mix flour and salt. Cut in butter until dough resembles rolled oats. Sprinkle in just enough water to hold the dough together. Form into a ball, handling as little as possible. Roll out on a floured waxed paper and turn into pie pan. For a flakier crust, refrigerate 2 hours before filling. This recipe will make a small 2-crust pure or a large 1 - crust pie. Bake according to the pie recipe you are using.
Directions:
Preheat oven to 425 degrees. Beat eggs. Add pumpkin and remaining ingredients, blending well after each addition. May be mixed in a blender. Pour into pie shell. Bake for 15 minutes. Turn down to 350 degrees and bake for 45 minutes or until knife inserted in the middle comes out clean.
