Are you just waiting for it to be 5 o'clock somewhere so you can pop open that bottle of wine? The weekend cant come soon enough so you can unwind from the week? Or maybe you havent out grown that party life from college.
Life seems kinda bla, you feel lost and unsatisfied. There has to be more than this....right?

😋This is a healthier homemade option to the popular Girl Scout cookies. They get their sweetness (& fiber boost) from dates.

TIP: The coconut oil isn’t absolutely necessary but it will help your chocolate to harden after cooling.

Coconut Chocolate Cookies

(about 12 cookies)

1 cup (95 g) unsweetened shredded coconut

10 Medjool dates, pitted

Optional: 3-4 drops of pure vanilla extract

⅓ cup (75 g) dark chocolate chips

½ tsp coconut oil

🍪Heat a nonstick skillet over medium heat and add the shredded coconut, stirring occasionally, until lightly toasted.  Remove from the heat.

Place the toasted coconut, dates, and optional vanilla into a food processor and pulse until combined. Continue to process until a dough begins to form.

Line a baking sheet with a silicone mat or parchment paper.

Energy is everything. The state we are in (happy, sad, depressed, tired, ect) can greatly affect how you see yourself, how you see the world, how you handle different situations. It is important to get into a high energy state if you arent-  When you are high energy you are more apt to be positive, think better about yourself, come up with creative ideas and remember things. 

A quick and easy way you can do this is to have a 30 second dance party, shake your body out or move your body in a joyful way. Next time you find yourself low energy or in a slump- try this technique and see what happens!

Sheet pan recipes are the BEST when it comes to quick & easy dinners.

This fajita recipe is a crowd-pleaser - guaranteed new favorite that you’ll want to add to the rotation.

Sheet Pan Chicken Fajitas
(serves 4 portions)

2-3 large bell peppers (red, orange, or yellow), cut into strips
1 large onion, halved and thinly sliced
2 Tbsp avocado oil
2 Tbsp fajita seasoning mix
1½ lbs (680 g) boneless, skinless chicken breast
2 limes: 1 juiced, 1 cut into wedges for serving
8 corn tortillas, warmed
For serving: Guacamole, hot sauce, salsa, and goat cheese

Preheat your broiler to high. Line a baking sheet with foil and spray with nonstick spray.

Place the peppers and onions in a large bowl and drizzle with 1 Tbsp each of the oil and fajita seasoning. Pour the vegetables onto the baking sheet and broil until they soften and begin to char, about 5-8 minutes.

While they are broiling, cut the chicken into thin slices (¼ inch/½ cm) and place in the bowl, tossing with the remaining 1 Tbsp each of oil and fajita mixture.

Place the chicken on top of the slightly charred peppers and onions and continue to broil until the chicken is cooked through (about 5 mins). Remove from the oven and drizzle with the lime juice.

Serve the fajita mixture with tortillas and your favorite toppings (guacamole, hot sauce, salsa, goat cheese, etc.).
