Portion control is simple with the “Plate Method”. Make your plate with 1/2 non-starchy vegetable (broccoli), and 1/4 each lean protein (baked chicken breast) and starch (baked potatoes) I used a drizzle of olive oil, salt and pepper over each for cooking/seasoning.

Spicy beans with turkey sausage 😋 1 # smoked turkey sausage, 1 can each red, white, and black beans (all rinsed and drained), 1.5 C frozen corn, 2 green bell peppers, 1 onion, 16 oz salsa, 2 tsp minced garlic, and 1 tsp cumin. Put it in a slow cooked and cook on high for 4 hours.

Big snackin’ Got to get those veggies in. Eaten with about 2 Tbsp Hidden Valley ranch dip made with light sour cream.

Be sure to wash your kale! Swirl it for a bit, then let it sit so any sand/dirt can sink to the bottom. This entire bunch of kale went into a delicious soup. Get those vegetables in wherever you can.

Chicken Salad: In a large bowl combine cooked chicken, chopped pecans, diced celery, and halved red grapes. In a small bowl combine mayonnaise and non-fat plain Greek yogurt (2:1), Dijon mustard, salt, pepper, and cayenne pepper. Toss to combine 😋
