My fast starts today!

I often hear comments like, “Why do you fast if you don’t have a weight problem?”—as if weight loss is the ONLY goal we should strive for. But what about health on a cellular level? What about how we feel within?

Avocado & Shrimp Chopped Salad Recipe 🌿🍤

Ingredients:

• 1 tsp Extra Virgin Olive Oil
• 8 oz Shrimp (peeled, deveined)
• Sea Salt & Black Pepper (to taste)
• 1 tsp Smoked Paprika
• 1 cup Cherry Tomatoes (quartered)
• 1 Avocado (medium, chopped)
• 2 stalks Green Onion (sliced)
• 1/2 Lime (juiced)

Directions:

1. Prep & Season Shrimp: Heat 1 tsp of extra virgin olive oil in a pan over medium-high heat. Season the shrimp all over with sea salt, black pepper, and 1 tsp of smoked paprika.

2. Cook Shrimp: Add the seasoned shrimp to the heated pan. Cook for about 2 minutes per side or until the shrimp is opaque and cooked through. Remove from the pan and set aside.

3. Prepare Salad: In a large bowl, combine 1 cup of quartered cherry tomatoes, 1 chopped medium avocado, and 2 sliced green onions. Add the juice of 1/2 lime, a pinch of sea salt, and black pepper to taste. Toss everything together to combine.

4. Assemble & Serve:
• Divide the salad evenly between two plates.
• Top each plate with the cooked shrimp.
• Enjoy your fresh and nutritious salad!
