Ever eaten maple flowers before?
I live on the top of a fairly high hill in north Washington state, which is surrounded by a line of huge big leaf maples (Acer macrophyllum), each one hundreds of feet tall. They’re striking, old and gorgeous. They creak in the wind, and generally fantastic to have so close by as I observe it’s growth through the seasons. Bigleaf maple is one of my favorite plant allies... Providing shade in summer, mulch in fall when the leaves fall...if you tap it during winter you get the sap to turn it into maple syrup....and I love that these maple trees provide a home for the squirrels and eagles nearby.
Today I foraged a bunch aiming to make maple flower fritters with them and pickle some as well.....
They taste like a blend of nuts and honeysuckle and artichoke hearts.

Recipe to try below:

Maple flower fritters
Batter:
1 cup of flour
1 teaspoon baking powder
1 tablespoon cornstarch
If making savory, I add in a pinch of salt and pepper, onion powder and garlic powder.
1 cup chopped green onions and 1/2 cup shredded carrots.
If making sweet omit vegetables and onion and garlic powder.
(enough ice cold water for mixture to resemble pancake batter)

Instructions
Whisk ingredients thoroughly to remove lumps.
Add 2-3 cups of rinsed bigleaf maple flowers.
Add vegetables (if making savory)
Stir lightly, coat flower mixture with batter
Remove flower mixture and add to hot pan holding one to two inches of vegetable oil
Fry until golden brown on each side, don’t crowd, and drain on absorbent paper
Remove from heat, and sprinkle more salt to taste and togarashi shichimi if you want them to have a kick.
Serve with soy sauce or hoisin sauce.
If making sweet, omit salt and togarashi and sprinkle with powdered sugar and cinnamon instead. Or serve drizzled with maply syrup like pancakes.

Forest Secrets Loose Incense
Ingredients:
1/2 cup cedar leaves
1 tbsp clove powder
1/8 cup dried rose buds
1 tbsp myrrh powder

Instructions:
Crush cedar leaves and rose buds until they resemble large breadcrumbs.

Mix the crushed leaves and buds with the rest of the ingredients (clove powder and myrrh powder).

Test burn a small amount of the mixture and adjust the proportions as needed for desired fragrance intensity.

To use, place a disc of heated charcoal in a safe holder and sprinkle the incense mix over it to release the aromas and smoke.

Store the incense mix in a dark, airtight jar until ready for use.
