Everyone loves to post the food before it’s consumed -when it’s beautiful and photogenic - but I always forget until I’m halfway through and then I think this was so good, I should’ve posted about it. So rather than wait and hope to remember next time I’m going to start snapping a picture whenever I think about it no matter how far through the meal I am …. On today’s menu is one of my favorite meals — sardine salad —- I know it’s a trend lately to eat sardines, but I have been enjoying these little buggers for years. In fact, I try to eat them once or twice a week and my favorite way is to mash them up and add whatever items are in the refrigerator. Today I have capers, red onion, banana peppers, and chopped olives. This then nestles on top of a bed of whatever lettuce is in the refrigerator today it was a mixture of some green leafy lettuce as well as a massive pile of herbs, dill parsley, and cilantro today. .. this is such a quick and easy meal for me now and packed full of nutrition
If Only I could get my family to eat sardines 😆
