Happy Valentine’s Day! This year I went all in for a Plantstrong meal. Shout out to Rip Esselstyn of Engine 2 and Chef Jamie of the Culinary Vegetable Institute and Chef’s Garden...I learned some new cooking techniques that are in alignment with WFBP principles. After another absence, I’m still here! Still cooking up lots of WFPB goodness for chronic disease prevention and reversal. Here’s a great warming soup for the brisk winter, an exciting new take on split pea soup. Hint: serve over baby power greens-it will wilt them with the heat AND it’s great for your endothelium! Enjoy!

This cozy soup recipe gets its creamy texture from yellow split peas, potatoes, and corn. Made with smoked paprika, it has a delicious sweet, smoky flavor.

Had this for dinner last night-made the strawberry vinaigrette. Turned it into a hearty salad, didn’t use vegan feta, used a can of garbanzo beans instead! Also added green onions, but red onions would work. And of course, nut free, use pumpkin seeds instead of walnuts! Served with grainy bread...yum!

A simple, super tasty Strawberry Spinach Salad made with soft, deep green spinach, ripe juicy strawberries & buttery avocado & oil-free, strawberry vinaigrette. Vegan feta optional but recommended!

Weekend veggie burger BBQ? Serve this fresh salad on the side for a burst of cancer preventing cruciferous vegetables, blood pressure lowering beets, and, well, just about everything else that will make your endothelial cells sing! If you don’t have coconut aminos, just use low-sodium tamari or soy sauce.

Fresh, delicious vegetable slaw with a garlic rosemary tahini dressing! Packed with nutrient-rich vegetables and fruit with cleansing benefits and tons of nutrients. Just 20 minutes required for this incredibly healthy side, snack, or salad base!

Happy Monday! Just made this lentil stew for dinner...serving it over a plain baked potato with some steamed broccolini on the side. It is fab! AND it has a nut-free option! Never to be one to leave a recipe alone, I added in some sliced white button mushrooms after sautéing the onions and garlic. Bon appetit!

Rich and creamy vegan lentil stew to warm you from the inside out. Full of healthy ingredients and anti-inflammatory benefits, to make a perfect cozy meal!
